BREAKFAST

was these Blueberry Yogurt "Buttermilk" Pancakes so named because I use yogurt, a staple in my fridge, to tenderize the batter in lieu of buttermilk, which is not a staple in my fridge.

These blueberries have been sitting in a plastic container lined with paper towel in my fridge since last weekend, and they were the perfect ripeness for pancakes this morning, with that slightly candied blueberry flavor to them.

The kids will actually be here for an early Friday dinner for the first week in several, and I'm making pernil for dinner, which they love, so I'll be off to marinate that in just a bit here.

The pernil is finally in the oven on a carrot and celery roasting rack after marinating for about 2.5 hours in the fridge and then another 45 minutes out of it to bring it up to room temp.

I sort of squeegee'd the marinade from the sides that don't have skin and rubbed them with a little olive oil to help the initial sear at the higher temp of 425F for 25 minutes.

At that point, I'll turn the temp down to 350F to roast it for about 3 hours or so while we get the kids, do a little shopping, make some black beans, and all that jazz. :)

When there's about an hour and 15/30 left in the roasting time, I'll throw in the rest of the marinade along with some quartered onions tossed in olive oil.

So what is the deal with this "Logmein,com" scam? Just had a friend get scammed by these crooks and she actually let them take control of her computer for over 10 min before unplugging her laptop. She did not turn over and credit card info or anything. What are the chances that her entire C drive was copied? Apparently the criminals (from India) surfed around the Event Viewer and tried to scare her that her PC was infected and needed special software to clean it. Session ended shortly after that. She was yelled at by a rather large group of people over this foolish action. What an idiot.

Very large teams of criminals in India are using these sites heavily for online social engineering scams.

Making some yummy BBQ Korean Short Ribs again this weekend. Just buying 10 lbs of ribs and using some decent marinade from a Jar. 2 Day marinade works best. This stuff is way better than BBQ burgers and dogs.

Did you see Bully Movie yet? Bullying seems to be a continuous and serious problem. La Jolla Country Day school in La Jolla CA has faced multiple bullying lawsuits by students. Friends I know recently chose to pull their kids from La Jolla Country day school due to complete incompetence and inaction by school staff. In 2011, although no damages were awarded, La Jolla Country Day School was found negligent and in breach of contract over a bullying lawsuit. Bullying at La Jolla Country Day School, a prestigious private school costing $20k/year, seems to continue.
