Reed practices a flamboyant self-invented style, characterized by percussive techniques and simultaneous rhythm and melody lines that dance and ricochet around each other, giving his music a level of excitement that is unparalleled among today's guitarists. Playing an array of guitars from acoustic to electric to classical Reed's vast range of explosively original music will forever change your expectation of a guitarist. First-time listeners find it impossible to believe that they're hearing just the one musician, in real time. Reed attacks the entire instrument in a never-ending search for the orchestra he knows is lurking inside. At full tilt, his fingers, thumbs, fists and hands at once suggest a drummer, keyboardist, bassist and several guitarists at work. The most impressive thing about Reed's technique, though, is that it doesn't draw attention to itself. His compositions are far from abstract virtuosic displays; even without lyrics he creates vivid, engrossing scenes. Sometimes the effect is almost onomatopoetic. Reed generates visual stimuli with every tweak of his instrument, thus augmenting his wordless compositions with an aura of the poetic. Each tune is a story in itself with a potent, cinematic atmosphere and an almost tangible thread of communication between Preston Reed and the listener. Reed's entry into this guitar odyssey was inauspicious enough, his path thereafter largely self-discovered. A few chords learned from his guitar playing father, a brief, very brief, flirtation with the ukulele, clandestine practice sessions of his favourite Beatles and Stones songs on dad's guitar .... and then a too-strict classical guitar teacher led to premature retirement. At 16, however, Reed heard Jefferson Airplane's rootsy blues offshoot, Hot Tuna. His interest was rekindled big time. Acoustic guitar heroes John Fahey and Leo Kottke were studied, their styles absorbed but not imitated, and at this point things really begin to get interesting because, at 17, Reed, by now precociously proficient, played his first live gig, supporting beat poet Allen Ginsberg at the Smithsonian Institute. Just getting on a train from his native Armonk in New York State to Washington was a cool adventure. And it was just the first of many, not least of which was the one which resulted from his signing his first deal with a major record company, MCA, through the auspices of his friend, country singer-songwriter Lyle Lovett. Determined to make the most of this opportunity, Reed pushed himself to go beyond the standard fingerpicking styles he'd perfected. Complicated

After the kerfuffle concerning Earl's Restaurant's here in Alberta  (their purchase of U.S. beef over Alberta beef). Another article on the complicated labeling/standards/science, agreement/disagreement on knowledge about where your food comes from. It's not easy, access to various foods is not equal across the board. Nor is it financially viable for everyone.

A bit of a read but worth it.

4 people died. What pisses me off is this was an ongoing issue and yet Dole couldn't seem to clean up the Listeria. Nine times ffs....

A Food and Drug Administration (FDA) inspection report obtained by FSN and reviewed by Reuters on Friday showed that Dole's tests of surfaces at the plant came back positive for Listeria on nine separate occasions in 2014 and 2015.

Dole said in its statement that the report dealt with issues that had already been corrected.

The report, dated Feb. 5, said the plant's third-party laboratory had notified Dole about positive Listeria test results from internal samples taken on Jan. 5 and 7. But it did not say whether testing was done to determine whether the bacteria posed a threat.

On Jan. 26, Dole told inspectors the company was aware that the Canadian Food Inspection Agency (CFIA) had found Listeria monocytogenes in four salad product samples collected by the agency earlier that month, according to the report.

Cambozola Bison Meatballs

Squared Mac'n Cheese, Arugula

I had a little argument with myself about what to call these meatballs. They are sweet little bites flavoured with black garlic, salt and pepper, super simple. The creamy Cambozola sauce is amazing, cream, cambozola, roasted hazelnuts, chili, mustard and Italian parsley. Literally made the bison meatballs out of this world!!!

Leftover mac'n cheese, I just had to try those delicious (normally round) breaded delicacies that I've read and seem so much! I learned that you need to add an obscene about of cheese and/or cheese sauce to get them like you see on the internet (read ooee gooey). Thank goodness that I had the cambozola sauce as a back up. Mind you with leftovers for lunch, I also found out they are fabulous dipped in strawberry ketchup!

Triple Cheese Bacon Mac'n Cheese

A quick bechamel (flour/butter/milk), three cheese, the saddest looking cheese in the fridge, not bad just in need of being used asap. Bocconcini, aged cheddar and goat's milk gouda. Melted into the bechamel, diced ramps added, snuck in a bag of young kale (my son was impressed with the green stuff, NOT). That being said, he ate it due to the cheesiness.

Diced prosciutto/hot capicola on top, like sugar helping the medicine go down. Aka the veggies go down.

I enjoy everything so it's a win, win for me!

Shawarma Flank Steak Wrap

Sauteed Bell Peppers/Onions/Garlic, Caramelized Eggplant, Meyer Lemon Yogurt, Cilantro, Wholewheat Pita Bread

Thank goodness I had a thawed flank steak in the fridge. A (I only meant to be an hour or so) nap turned into a 5 hour snooze, ooops! Waking up at 9 pm, hungry and time to make some food.

This meal came together superfast! Yay for having a Shawarma spice mix (I don't even remember when I mixed this one up) on the spice shelf. I sliced the flank steak across the grain, tossed with a few tablespoons of spice mix and some olive oil. Sauteed and caramelized the veggies, mixed the Meyer lemon yogurt up while the flank steak did a quick marinate.

Seared the flank steak stove top, only to about medium/medium rare, onto the pita bread, drizzle the sauce and done!

I should sleep a long time more often, was delicious.... more »

On Sunday while braising the lamb shanks, something else was in the pot, lamb tongue. I just happened to be somewhat with it on Sunday, it was a twofor.

I figured out a better way to remove the skin from braised tongue, a vegetable peeler works like a hot dam. Wastes less and is much, much quicker.

The medley of topping occurred from a quick dig through the fridge. I did have chopped tomatoes for my son, he's a little less adventuresome when it comes to food than I am.

Those radish pickles turned out delicious!!!

Delicious, oh yes!! I think I have this tongue meat thing down pretty good. Braise, fry until crispy but still tender inside (fried in a beautiful leaf lard that I rendered).

Red Wine Poached Pear Tiramisu

Cuban Honey Mascarpone

Surprise, I actually made a dessert!!! I have poached pears in the fridge that need to move along. Pears love coffee, cream and biscuits.

Strong coffee/red wine syrup soaked lady fingers, sliced red wine poached pears, Cuban honey creamy mascarpone.

The dessert comes together fairly quickly, just needs time to chill. I have to work on the method for the mascarpone/cream/honey mixture. I'd like it to be a little firmer in consistency.

The Tiramisu could be made in individual clear cups for a nicer presentation.

Super delicious though! Yes, I was lazy and didn't make the lady fingers, I guess I'll save that for special occasions!

Italian Braised Lamb Shank

Creamy Polenta, Stewed Root Vegetables, Meyer Lemon Crema

The weather has been rainy and cool lately, perfect for a Sunday braise. A traditional Italian style. Lamb shanks braised in chicken stock, onions, garlic, fresh rosemary/thyme with the addition of parsnips, mixed carrots and tomatoes. I've been diving into the freezer more often (tomatoes), fresh crops are on their way so using up the last of the frozen from last year has become a priority.

Creamy, buttery, cheesy polenta, pure comfort food. I tried a new method that calls for a 5 - 1 ratio, water to cornmeal. A longer cook, I'm not 100% certain if this made the polenta any better. I'll have to try it a couple of more times to see if I think doing this makes a real difference.

Italian Braised Lamb Shank

Creamy Polenta, Stewed Root Vegetables, Meyer Lemon Crema

The weather has been rainy and cool lately, perfect for a Sunday braise. A traditional Italian style. Lamb shanks braised in chicken stock, onions, garlic, fresh rosemary/thyme with the addition of parsnips, mixed carrots and tomatoes. I've been diving into the freezer more often (tomatoes), fresh crops are on their way so using up the last of the frozen from last year has become a priority.

Creamy, buttery, cheesy polenta, pure comfort food. I tried a new method that calls for a 5 - 1 ratio, water to cornmeal. A longer cook, I'm not 100% certain if this made the polenta any better. I'll have to try it a couple of more times to see if I think doing this makes a real difference.

Meyer lemon crema (from the freezer also), my lemon crack! Just brightens up any meal.

Saturday Pizza Night

How I have fun on a Saturday night.

Picking up some cured meat, charcuterie. I wish I had more room to play a little more with the technique. I should keep my eye's peeled for a second hand small fridge. You need to control humidity and temperature. Where I would actually put a fridge, not a clue.

Farmers Market Spring Time

Some wonderful acquisitions today.

Ramps, I've never eaten them, looking forward to some deliciousness. Similar to onions (or so I'm told) with a distinctive taste all it's own. I'll be reading and looking up all the information I can find.

Fiddleheads, a Spring delicacy. I was basically warned not to overcook them, or mush will happen. Another explorations. I might have tried them once, I don't recall.

The radishes for the second week from one particular vendor, only one week left. Tops in the freezer for smoothies at some later time (they'll keep now), possibly an addition to soup. There's a jar of pickled radishes in the fridge now, looking forward to tasting. Salted the radishes and let them sit for an hour. Equal parts sugar and cider vinegar, sugar dissolved and the resulting syrup poured over... more »

Work Stove

Well, the stove at work (oven) died a bit ago. It's been interesting cooking without an oven, somehow I've managed. This is the new stove that was ordered for me, slowly getting used to it. The idiosyncrasies of both the stove and myself are slowly beginning to work together.

One of the yearly fundraisers was presented with a "Wish List" from the kitchen. Some wonderful people came through in a big way, I was lucky enough to do a major shop on Friday. Some essential items were added to the kitchen which will allow me to cook quicker, more from scratch. I see bread/bun making in the near future.

Another fabulous donation was moved from purchasing from a large corporate grocery store to a couple of vendors at the Farmers Market. Those same vendors are giving the Hospice a discount on our purchases. Community FTW!!!!

Dinner, a great way to have a salad with your meal and not even notice. Removed the bone from chicken thighs (you can buy them that way also), cooked them crispy, bacon, lettuce tomato. Seriously, doesn't get much easier.

I make homemade (my geek space), if you don't have the time or inclination, buy the best ingredients you can afford. Make them fresh, hands down, better than any fast food place.

Root Vegetable Lamb Stew

Parsnips, Heritage Carrots, French Fingerling Potatoes, Green Onions, Cress

Dinner last night, indeed I did forget to take something (meat) out for dinner.

Off the cuff kind of stew that just sort of happened. A quick peek in the fridge, that broth leftover from the lamb breast the other night. Lifted the fat off of the top, grabbed some frozen ground lamb out of the freezer and basically thawed the meat in the simmering broth. I think the first time I ever saw someone do this was in Scotland, long ago. I'll have to remember it for on those days (which happen fairly often) I forget to get meat out to thaw.

Quickly cleaned and added to the meat/broth mixture, parsnips, heritage carrots (yellow and burgundy) and french fingerling potatoes. All cut small enough to cook fairly quickly in a pan, not submerged (lid on), sort of a... more »

The parsnips were mush, my bad, have to time that better next time! Keeps all the flavour in the dish, not in boiling water.

Finished off with some chopped green onions and a bunch of cress sprouts. I didn't bother thickening the broth aka lazy as hell!!! Still super delicious!

I've almost cleared most of the root veg out of the fridge and will be moving on to the seasonal veg that are heading my way. Aka sometime in the next month the local asparagus will be on it's way in (fingers crossed).

The most positive use of drones I've seen to date!!!

Those asshat mining and logging companies....

With material support from the California-based organization Digital Democracy, the team chose a fixed-wing design—a solid triangle of white, with an ironed laminate cover—that can fly at a distance of 50 kilometers.

They mounted a camera donated by GoPro and programmed it to take a photo every two seconds. This created a series of stop-motion images that could later be layered to create a multi-dimensional interactive map. They controlled the drone with Mission Planner, an open-source flight-tracking software.

Oven Roasted Sage Potatoes, Sauteed Flat Beans & Bell Peppers

I had seconds of the vegetables!! Note to self, don't put the flat beans in with the chicken, bye bye crunchy skin (silly I know, that's how I learn).

For me personally, the only way I like to roast potatoes is at a high heat (450 F). It's oven frying at it's best, this using raw potatoes, seriously I don't have time to boil and bake again. Just put them in the dam oven and get on with other things. You do have to set your timer to check them after 15 - 20 minutes (give them a turn). In total about 30 - 40 minutes until done, with minimal fuss. Toss with the oil of your choice, salt and pepper, herbs or spices.

Yeah, yeah, I used the slice of cambozola to hide the less than crispy skin that happened. Remember that little trick, works with most melty style cheese. You can even sprig it with an herb, even prettier, I was hungry!

I'm pretty happy about the fact that, with the exception of the onion, everything on this plate was raised or grown locally, bought direct from the farmer/greenhouse grower. Not in a snotty way, just something I believe in, my community.

Had some fun playing around with a new to me cut of lamb. Boneless lamb breast. Everything I could read about this cut said it could tend to be fatty, slow and low was the best way to cook it. The cut lends itself to stuffing so very well. Sauteed onions, bread crumbs, toasted almonds, garlic sprouts, cumin, cinnamon and Aleppo pepper, made for a spicy, nutty stuffing. Poached in chicken stock with a cinnamon stick and a few allspice berries. The lamb turned out meltingly tender.

I was beyond the moon on Saturday at the farmers market, the ladies from the Onoway greenhouse had the first radishes of the season. They were gorgeous!!! The mango's were a completely unexpected purchase. They were the first decent mango's I've seen this year, I caved big time! Wonderful, fabulous, juicy, sweet mangos. The Cheesiry is at the Farmers Market, some of the finest sheep's milk cheese to be had.

Bacon seemed like a good companion. Ciabatta also from the Farmer's Market, strawberry ketchup I made a couple of weeks ago.

Lazy food, I suppose I should be thinking of something for dinner....

I've spent the last couple of days, making a fairly substantial batch of broths. I've been wanting to try making pork broth for some time, my supply of chicken broth was getting low. I happened to have lamb bones from a couple of meals, I also had a shoulder bone from cutting down a lamb shoulder.

A fantastic side effect was the meat that I picked off of the bones after the broths were finished. Quite surprising how much meat is still left on the bones you use to make broth with. A fantastic side effect was the meat that I picked off of the bones after the broths were finished. Quite surprising how much meat is still left on the bones you use to make broth with. The broths are very rich and full flavoured. I chose to reduce them down by half, concentrate them so they take up less room in the freezer. I will thin them with water at about two thirds broth to about one third water, depending on how I'll be using them (soup or sauce).

Pork meat from the pork stock morphed into a great spicy pasta dish on Thursday night.

Chicken meat from the chicken stock turned into a delicious sriracha mayo chicken sandwich on Friday night.

I've done multiple (read tons) of dishes over the last couple of days. It's been a lazy food day so far. No, I don't have a dishwasher, kicking it old school.

Roasted Eggplant Sandwich

Pomegranate Vinaigrette, Yogurt Tahini Sauce, Cilantro

Busy day at work yesterday, made a Greek inspired meal. Greek Chickpea Soup, Tomato/Bell Pepper Feta Salad, Tzatziki Filled Mini Pitas, Triple Chocolate Cookies (freshly baked).

Hence the lazy leftover sandwich for dinner. I was very glad there were leftovers!!!

Today's menu at work (half formed) Orange-lemon Dill Sole (en papillote), rice, Fresh Mint Orange Carrot Salad, Romaine salad of some kind. And dessert, which remains to be seen....

Grabbed some lamb out of the freezer (leftovers from the shoulder a while back), still have flatbread I can bake. I'll figure something out when I get home.

Serves 4 generously.

2 lbs of  eggplants, sliced about ½ inch thick
extra virgin olive oil as needed
salt
1 tablespoons pomegranate molasses
1 tablespoons red wine vinegar
1 tbsp olive oil
1 cups plain whole-milk yogurt
1 garlic clove, crushed
2 tablespoons tahini
¼ cup pine nuts
Fresh cilantro

Place the eggplant slices on an oiled sheet of foil on a baking  tray. Brush both sides of the eggplant slices with oil, place in a 450F oven for about 30 – 40 minutes. Turning the eggplant slices half way through the cooking time, until golden brown. Arrange on a serving plate.

Make a vinaigrette of sorts by combining the pomegranate molasses, red wine vinegar and olive oil. Beat the yogurt, add the garlic and tahini, beat again.
 
Fry the pine nuts in olive oil until golden.

Drizzle the yogurt/tahini mixture over the eggplant, followed by the pomegranate molasses . Dress with fresh cilantro and the pine nuts.

This eggplant dish was amazing, leftovers are in the fridge. I'm working on expanding my eggplant recipe repertoire. Bags of them at the farmers market in the Bargain Bin, beautiful quality eggplants.

Leftover sauce from the Bison meatball dish the other day, made brunch a fairly quick to make meal. Delicious also.

Purple Coleslaw, Garlic Shoot Greens, Homemade Flatbread

I know, I know, the flatbread, the recipe makes a hell of a lot (somewhat unintentionally), good thing it keeps.

The BBQ sauce was made using a container of Bravas Sauce (from the freezer), homemade Sriracha and Strawberry ketchup. Playing around with combinations before the BBQ season hits hardcore.

The beef was from when I made stock, picked from the bones and frozen. Lends itself well to a pulled beef kind of sandwich.

The coleslaw, leftover cabbage from making kimchi, mixed with shredded yellow carrots and a tangy mustard vinaigrette.

Tasty openface, pretty colours too!

Mind blown at the market. Bedding plants out at the market already. I wasn't expecting this, not set up at home to look after them. I will be for the Saturday that's coming up. Some very interesting plants to be had! I just have to keep them alive until I'm ready to plant.

The selection of canned fish at The Italian Center, I don't buy much in the way of canned goods. I spent quite some time reading labels, though once I've found what I'm looking for, things go quicker. Some are noted later as I'm curious, want to try those.

Using the technique for Shakshuka, using ground bison mixed with harissa, formed into meatballs. The meatballs were poached in the sauce.

I googled all over, looking for the exact meaning of Shakshuka. Lots of what Shakshuka is, not the literal translation of the word. This could be due to my poor search skills. I did manage to find this:

The literal translation of shakshuka means “all mixed up”. Say it a few times over aloud. Seriously entertaining.

I admit that this did fit in with my idea of what I wanted it to mean.

I started another batch of the flatbread, using the measure method instead of the weigh method (the recipe has both). Still, needed about a third more flour that what is called for. I'm not sure if it's a difference in the kind of flour (the recipe is from the U.S.) or what the issue is. In the end it doesn't matter as much, the flatbread is insanely delicious and now is my go-to recipe.

Not the son's fav, doesn't matter, I'm the cook!!
