Reed practices a flamboyant self-invented style, characterized by percussive techniques and simultaneous rhythm and melody lines that dance and ricochet around each other, giving his music a level of excitement that is unparalleled among today's guitarists. Playing an array of guitars from acoustic to electric to classical Reed's vast range of explosively original music will forever change your expectation of a guitarist. First-time listeners find it impossible to believe that they're hearing just the one musician, in real time. Reed attacks the entire instrument in a never-ending search for the orchestra he knows is lurking inside. At full tilt, his fingers, thumbs, fists and hands at once suggest a drummer, keyboardist, bassist and several guitarists at work. The most impressive thing about Reed's technique, though, is that it doesn't draw attention to itself. His compositions are far from abstract virtuosic displays; even without lyrics he creates vivid, engrossing scenes. Sometimes the effect is almost onomatopoetic. A few chords learned from his guitar playing father, a brief, very brief, flirtation with the ukulele, clandestine practice sessions of his favourite Beatles and Stones songs on dad's guitar .... and then a too-strict classical guitar teacher led to premature retirement. At 16, however, Reed heard Jefferson Airplane's rootsy blues offshoot, Hot Tuna. His interest was rekindled big time. Acoustic guitar heroes John Fahey and Leo Kottke were studied, their styles absorbed but not imitated, and at this point things really begin to get interesting because, at 17, Reed, by now precociously proficient, played his first live gig, supporting beat poet Allen Ginsberg at the Smithsonian Institute. Just getting on a train from his native Armonk in New York State to Washington was a cool adventure. And it was just the first of many, not least of which was the one which resulted from his signing his first deal with a major record company, MCA, through the auspices of his friend, country singer-songwriter Lyle Lovett. Determined to make the most of this opportunity, Reed pushed himself to go beyond the standard fingerpicking styles he'd perfected. Garlicy Beef/Pork Burger

Smoked Applewood Cheddar, Sauteed Crimini Mushrooms, Caramelized Onions, Romaine, Tomato, Lemon Basil Aioli

I like big burgers and I cannot lie....

I know, I know! A combination of Berkshire pork and grass-fed ground beef, a good whack of minced garlic, salt and pepper. I personally find I like being able to taste the flavour of the meat (yes, I've said this before). My son and I were discussing how large I tend to make my burger patties. I'm a 5 - 6 oz kind of individual. Most steaks run about that size, why not the burger patty?

Enhanced with yummy caramelized onions, some meaty, flavourful crimini's. Romaine lettuce for the crunch (also, time to quickly use it or lose it). Sliced beefsteak tomato, don't even get me started on Sylvan Star's Smoked Applewood (ie. TO DIE FOR).

Cordials and Jam

Tayberry Cordial, Lemon/Lime Cordial, Orange Blossom Raspberry Jam

WooHoo, it rained! Cool enough to get back into the kitchen, cape removed. Having a blast!!!

Cordials can be drank with or without the addition of alcohol. I tried my first one with just ice and water. Very flavourful, no fake taste, pure fruit, not overly sweet. I can see getting some soda very soon or a carbonated water, those bubbles.

The Lemon/Lime cordial is still infusing, stoked to give that one a try.

I'm having fun playing with flavours for jam's. I see some boozy ones in the near future. The Raspberry jam was flavoured with cinnamon, sweetened with honey and balanced with Blackberry/Ginger balsamic. When everything was finished cooking, a teaspoon of orange blossom water.

A quick note: I'm a somewhat lazy cook at times, I place my jam's into glass canning jars (washed in hot soapy water and rinsed), leave about an inch to 1/2 inch head room and freeze. It's quicker, when you want some jam, out of the freezer into the fridge to thaw. This I learned from a friend who had health issues and couldn't use plastics. Works for anything that can be frozen.

Here's a recipe if you are interested in giving cordials a try. You can substitute most any berry. I would recommend cutting large berries (aka strawberries) into smaller pieces or you could just cook the cordial for a bit longer.

Tayberry Cordial

600 g Tayberries, washed
300 g sugar
Juice from 1 large lemon
1 litre of water

Place all the ingredients in a large pot. Slowly bring the ingredients to a boil, stir well. Cover and simmer for about 10 minutes. Cool, strain through a fine sieve, pushing to get as much juice as you can. Place into a container, into the fridge to chill. Mix at whatever ratio works for you (I did 50/50 cordial to water). Enjoy!

I so must make this!!! I've made hot sauces before but not Sriracha. Homemade sauce ROCK HARD. So dam much better than the ones from the supermarket (in most cases). AND you know just exactly what went into it.

Portuguese Custard Tarts

B.C. Cherries

After a trip across the city to get some of the fabulous fruit that is being brought to our city by the B.C. Fruit Growers, I finally managed to pop into a little local bakery that I've driven by a number of times.

Custard tarts, I wish there would have been more to purchase but it is a Sunday. I've inquired about when the baking happens, Monday/Tuesday are the days. Seems like popping in on a Wednesday might be a plan.

The tarts, delicious, rich, flaky pastry! Cherries on the side, fresh and firm.

Fabulous find for my local food stores.

A Personal Story

Stories like this make me smile.

One thing did change, however. Young people, gay or straight, can now grow up thinking about long-term relationships, marriage, and family life. There are still difficulties to confront in gaining family acceptance and dealing with the loss of some friendships, but Canada’s progressive approach to this issue has made it possible for gay people to find love, to build their own families, to make new friends and to share special moments, whether it’s a wedding day, the arrival of a child (whether by adoption, surrogacy or otherwise) or just growing old with a loved one.

Steak and Potatoes

Tri Tip, New Potatoes, Butter, Dill, Smoked Maldon Salt

I literally squeeed at the Farmer's Market today. New potatoes!!! I don't have a garden (yet), probably not this year. The yard after the snow melted is basically a nightmare. Slowly improving but no where near what I hope it will be.

When I squeeed, the person at the stall looked at me, smiled and said: "We dug them up on Thursday."

Two precious bags of new potatoes joined me on the drive to work. To say the least, it was a tad hot in the kitchen today. Lucky find in another stall was Tri tip steak. I should have bought a lotto ticket today, luck seemed to be with me.

Nothing fancy, steamed the potatoes, tossed them with some fresh dill and sweet butter. A generous pinch of smoked maldon salt. Seared Tri tip. On the plate, a few quick photos. Get... more »

From flower-emblazoned cemeteries to rooftop gardens and balconies, Norway’s capital Oslo is creating a “bee highway” to protect endangered pollinators essential to food production.

“We are constantly reshaping our environment to meet our needs, forgetting that other species also live in it,” Agnes Lyche Melvaer, head of the Bybi, an environmental group supporting urban bees, which is leading the project.

“To correct that we need to return places to them to live and feed,” she explained, sitting on a bench in a lush city centre square bursting with early Nordic summer growth.

Durian Desserts

Yes, yes I would, in a heartbeat!

I really wanted help understanding the complexities of durian fruit and how it is prepared, so I decided to travel with my Mandarin-speaking friend, Janet Cao, to Monterey Park in the San Gabriel Valley, where I’d heard pastry chefs were doing really exciting things with the stuff. I dearly love Chinese food, but had still never tried a dessert with durian in a starring role.

Durian Desserts

Yes, yes I would, in a heartbeat!

I really wanted help understanding the complexities of durian fruit and how it is prepared, so I decided to travel with my Mandarin-speaking friend, Janet Cao, to Monterey Park in the San Gabriel Valley, where I’d heard pastry chefs were doing really exciting things with the stuff. I dearly love Chinese food, but had still never tried a dessert with durian in a starring role.

What you are about to experience 
over the course of the next 10 days is pretty awesome.
We play a game - 500 photographers and myself - a photography scavenger hunt.

What  is the scavenger hunt?
Only the most inspiring, creative and fun way to learn your camera, push your limits, experiment, and shoot things in ways you didn't think you could.

I host this event a few times a year for anyone of any level of photography to participate.
I open the game up to 500 Photographers
I give you 10 items to shoot 
I give you a period of time to shoot and enter your photos.
Then I have them judged by amazing photographers  

I then open the albums up to the public - every morning over the course of 10 days. 
There are 10 categories:
This is the first - the "*BLISS*" album.

This event is an amazing way to use your camera in new ways. 
It gets you seeing things in new ways,
It helps improve your photography skills, 
gives you a huge audience, 
and let's everyone celebrate each other's successes. 
Make new friends,
and be a part of a community of photographers who care about each other, teach each other, and inspire one another.

The sign up for the next round of the scavenger hunt will be announced on day 10 of reveals from this round.

The group of "scavengers" that participate create a community unlike any other on G+. 
Support, encouragement  friendships even some #huntsmack is enjoyed. 
We become a family over the course of the month.

Chicken Chorizo Sausage, Harissa Sauce, Homemade Mayo, Cheddar, Tomatoes, Spinach, Leftover Sauteed Crimini's & Onions

My condiments selection needs some work, aka homemade ketchup, some chutneys, relishes. Random selection of items thrown on the bun while the sausage cooked. Work days, unless I have a super organized day and/or am feeling particularly inspired, tend to be lazy dinner days.

Garlicy Beef/Pork Burger

Smoked Applewood Cheddar, Sauteed Crimini Mushrooms, Caramelized Onions, Romaine, Tomato, Lemon Basil Aioli

I like big burgers and I cannot lie....

I know, I know! A combination of Berkshire pork and grass-fed ground beef, a good whack of minced garlic, salt and pepper. I personally find I like being able to taste the flavour of the meat (yes, I've said this before). My son and I were discussing how large I tend to make my burger patties. I'm a 5 - 6 oz kind of individual. Most steaks run about that size, why not the burger patty?

Enhanced with yummy caramelized onions, some meaty, flavourful crimini's. Romaine lettuce for the crunch (also, time to quickly use it or lose it). Sliced beefsteak tomato, don't even get me started on Sylvan Star's Smoked Applewood (ie. TO DIE FOR).

Hawt Bacon/Potato Salad

Roasted Purple Potatoes, Berkshire Bacon, Asparagus, Sweet Bell Peppers, Chives, Italian Parsley, Cherry Tomatoes

A somewhat speedy dinner, considering the potatoes roast while you do other things. Sauteing the asparagus is a 5 minute job (after you've cooked the bacon). Chopping the other vegetables/herbs, probably another 10 or so. Just a quick note, I didn't cook the sweet bell peppers beforehand. They were just on the bottom of the bowl, the heat from the potatoes warmed them through completely, still leaving a little crunch. Tossing everything together while still hot, heavily drizzled with white balsamic vinegar. Careful there, vinegar fumes! The great thing being that the hot potatoes basically sop up the vinegar giving you a slightly tart flavour to the potatoes. More tart sweet because you are using balsamic. The technique is German (if I recall correctly). The ingredients can be whatever you happen to have in the fridge that goes together. The combination of the vinegar and bacon fat turned into the most wonderful vinaigrette!

Vanilla Meringue

A fairly simple and light summer style dessert last night. I thought it seemed appropriate to mix raspberries and blackberries with tayberries as the tayberry is a mixture of both. The tiniest bit of berry sugar was gently tossed into the berries, a little time to macerate, done.

The meringues were fairly simple. I hadn't made meringues in quite some time.

For the Meringues:

4 egg whites
1 cup berry sugar
1 tsp cornstarch
1/2 tsp white wine vinegar
1 tsp vanilla bean paste

Preheat oven 275F/135C.

Whisk the egg whites until they form glossy, stiff peaks. Add the sugar, a little at a time until it is all incorporated. Fold in the cornstarch, vanilla and vinegar. On a cookie sheet covered with either parchment or a silpat, pipe (or use a spoon to... more »

Bake for 1/2 to 1 hour without opening the oven door until a pale honey colour. Mine were a little more than honey coloured, still delicious. The time will depend on how big you make your meringues. Turn the oven off and let the meringues cool completely inside the oven.

Meanwhile, mix your berries with sugar (or not) completely your choice as to how you like to eat your berries.
Place the meringue with the berries, either under or over, enjoy!

Steak Sandwich

Hangar Steak, Sauteed Shitake/Crimini Mushrooms, Sauteed Spinach, Garlic Toast, Red Win Jus

Rushing to get dinner finished after a somewhat busy day. Hopefully a rewarding one in the long run. A simple steak sandwich. I was hungry enough I didn't even bother with cutting the steak for the photo. Wouldn't you know, I nailed a perfect Medium-rare, you'll have to take my word for that.

Off to finish the dessert I started before making dinner.

I adore Yirgacheffe, my everyday coffee. I'm lucky enough to have a source here in the city, local roaster. A very interesting article on the country that grows this coffee.

According to the International Coffee Organisation, Ethiopia is unique in Africa for having a strong domestic coffee consumption culture. Other coffee producing countries, it seems, don’t drink their product.

Middle Eastern Spiced Tongue Taco

Preserved Lemon Salsa, Maple Tahini Sauce, Red Onions, White Corn Tortilla

Brined beef tongue (two days), simmered in a combination of Middle Eastern spices (Bay leaf, cinnamon stick, cumin, sumac, thyme (both fresh and dried), Aleppo chili, whole corriander) until tender. Pan sauteed until crispy. I think the best beef tongue I've made to date!

Keeping with the Middle Eastern flavour profile, the salsa had preserved meyer lemon, along with the basics, garlic, onions, cilantro and fresh lime juice. I wanted tahini with the taco, wound up going with a combination of creme fraiche, tahini, sumac and maple syrup. Simple, yet with a great flavour punch.

Fusing cuisines (in this case, Middle Eastern, Mexican) is so much fun!

Spicy Tayberry Pork Ribs

Pancetta & Asparagus, Garlic Bread

Oh, B.C. I adore your fruit orchards, bringing berries to us about a month before they will be found locally. Today's find at the farmers market was Tayberries. A heads-up from a friend let me know they had arrived. My first time experiencing Tayberries, the poor fruit spent the day in the trunk of my car while I was working. Upon removing them from my shopping bag I noticed they were a little worse for wear. Picking through the berries, saving those I could, the other badly mashed ones wound up in a BBQ sauce of sorts. I didn't want them to go to waste so, mashed with a bit of honey, brought to a simmer. I let them simmer for about 10 minutes or so, strained them through a sieve. The smooth, rich ruby sauce went back to the heat, the addition of powdered ginger, a pinch of salt and some Aleppo chili kicked... more »

The smooth, rich ruby sauce went back to the heat, the addition of powdered ginger, a pinch of salt and some Aleppo chili kicked up the flavour. I reduced the sauce a little, painted it onto the Berkshire pork ribs that had been cooking slow and low (275F). A couple of applications of the sauce, about every 10 minutes or so, heat turned down to 250F. This resulted in a tart, hot, sticky sauce that adhered to the ribs. I'm so going to do this again with some other berries as they come into season.

I tried to photograph the ribs and catch how shiny and ruby coloured the sauce was. Hope you can see this.

Veggies, simple, using up next to the last of the asparagus. A quick pan saute with pancetta, done.

I've made up a batch of garlic butter and frozen it, so anytime the desire for garlic bread or toast happens. Easily indulged.

Not bad for dinner after a long work day!

Last night was a soup night. It's been some what cool and rainy here. Another use for asparagus, still slightly crunchy but tender. Ground chicken, flavoured up with ginger, garlic and parsley, oven baked. I stirred a large spoonful of sambal into the broth, along with fish sauce and lime, perfect!
