Reed practices a flamboyant self-invented style, characterized by percussive techniques and simultaneous rhythm and melody lines that dance and ricochet around each other, giving his music a level of excitement that is unparalleled among today's guitarists. Playing an array of guitars from acoustic to electric to classical Reed's vast range of explosively original music will forever change your expectation of a guitarist. First-time listeners find it impossible to believe that they're hearing just the one musician, in real time. Reed attacks the entire instrument in a never-ending search for the orchestra he knows is lurking inside. At full tilt, his fingers, thumbs, fists and hands at once suggest a drummer, keyboardist, bassist and several guitarists at work. The most impressive thing about Reed's technique, though, is that it doesn't draw attention to itself. His compositions are far from abstract virtuosic displays; even without lyrics he creates vivid, engrossing scenes. Sometimes the effect is almost onomatopoetic. A few chords learned from his guitar playing father, a brief, very brief, flirtation with the ukulele, clandestine practice sessions of his favourite Beatles and Stones songs on dad's guitar .... and then a too-strict classical guitar teacher led to premature retirement. At 16, however, Reed heard Jefferson Airplane's rootsy blues offshoot, Hot Tuna. His interest was rekindled big time. Acoustic guitar heroes John Fahey and Leo Kottke were studied, their styles absorbed but not imitated, and at this point things really begin to get interesting because, at 17, Reed, by now precociously proficient, played his first live gig, supporting beat poet Allen Ginsberg at the Smithsonian Institute. Just getting on a train from his native Armonk in New York State to Washington was a cool adventure. And it was just the first of many, not least of which was the one which resulted from his signing his first deal with a major record company, MCA, through the auspices of his friend, country singer-songwriter Lyle Lovett. Determined to make the most of this opportunity, Reed pushed himself to go beyond the standard fingerpicking styles he'd perfected. Patatas Bravas

Roasted Baby Potatoes, Bravas Sauce, Bacon, Truffle Aioli, Green Onions

Completely satiated. Luxurious, creamy, earthy, absolutely everything that was required when 15 minutes before you had no idea what you wanted. And then this popped into your head.

Crispy roasted yellow fleshed potatoes, tossed with olive oil, 400F oven for about 1/2 hour.

Bravas sauce from the freezer (love, love those big batches that you divide and put in the freezer).

Berkshire bacon, tastiest dam bacon going. Be warned, this bacon ruins all other bacon's for you. Just not the depth of flavour that Berkshire bacon gives.

Homemade aioli with white truffle oil stirred into. Not too much truffle oil as you don't want it to be overpowering.

The fresh, crisp bite of green onions.

Spicy Hangar Steak Wrap

Maras Pepper/Roasted Cumin Hangar Steak, Sauteed Garlic Bell Peppers, Creamy Brie, Spicy Sprouts, Warm Pita Bread

Quick, easy, delish! One pan deal, my favourite!

Saute bell peppers with freshly minced garlic, remove from pan (keep warm). Slice steak, toss with spices, quick saute. Brush the pita bread with olive oil, either wrap in foil and heat in the oven or brush with oil and heat in a pan. Either way works. Mix the peppers with the steak, pile on a warm pita. Place brie on top, take photo's while the brie gets warm and oozy from the heat of the steak. Stuff into your face. And done!!!

I've been working around the house today, seem to have gotten my motivation back. Figured I had best make use of it before it possibly disappears again. Who knows, if this keeps up, I may have a place to hang the rest of my clothing before... more »

Breakfast for Dinner

Conehead Cabbage, Bell Peppers, Berkshire Bacon, Basmati Rice, Sambal, Duck Fat Fried Egg

Acquiring more of the Conehead cabbage from the farmers market is on my list. I'm enamoured. A fried rice of sorts with the cabbage, bell pepper, Berkshire bacon and basmati rice. A splash of apple cider vinegar gave the right amount of bite to the fried rice. The sambal added a nice touch of heat. The duck fat fried egg, what can you say. Luxurious with the combination of bacon and duck fat. Somewhat simple food, definitely delicious food.

Peach/Blue Cheese Stuffed French Toast

Lavender Sauteed Peaches, Berkshire Bacon

Technically not french, more like polish but you get the idea. Blue cheese being what it is I didn't use scads of it, just a little for the tangy flavour pop! One of those instances where less is more. Sliced peaches on the inside, sauteed lavender sugar peaches on the outside.

I went with honey for the drizzle as it goes beautifully with both peaches and blue cheese.

There might be a little bacon hiding in the background, maybe....

Defeated by charcoal briquettes! Fun time yesterday trying to get the BBQ briquettes going, they won! I'll be revisiting today and making fire (come hell or high water). I'll practice my fire making skills and grill eggplants/red peppers. Today I'll rub the brisket with spice and let it happy meld overnight.

It's been well over a year (and a day) since I've used a charcoal BBQ. I managed to find my chimney starter but by then the light was beginning to fade.

The ribs made it into a low and slow oven instead, they turned out beautifully but not quite where I had intended them to go. I made a sauce with roasted gochujang (recipe below) that turned out beautifully. Hot/sweet/spicy, a fabulous, end of cooking glaze for the meat.

Truffle coleslaw, homemade mayo with white truffle olive oil added. I might have purchased a few of those conehead/sweetheart cabbages to play around in the kitchen with.

Roasted Gochujang Sauce for Meat

4 minced garlic cloves
1 inch fresh ginger root, grated
1/2 tsp ground ginger
4 tbsp roasted gochujang paste
2 tbsp soy sauce
2 tbsp honey
1 tbsp rice vinegar
3 tbsp brown sugar
1 tbsp fish sauce
1 tbsp sesame oil

Place all the ingredients in a pot. Gently bring to a boil, watch the sauce carefully as it can burn easily. Turn the heat down and simmer for about 5 minutes.

When your meat is finished cooking, generously spoon the sauce over the meat and return to a low oven for about 5 - 10 minutes.

Be prepared for some extensive finger licking goodness!

Yay, green tomatoes at the farmers market today, I pounced! I personally enjoy a crispy coating on my fried green tomatoes, best crisp going, Panko. Seasoned flour, egg (twice dipped) and panko, made for the most delicious crunch coating. While still giving the green tomatoes time to cook and become tender. Fried in olive oil because I have an affinity for olive oil (aka I like it), you could certainly use any kind of oil that works for you.

Muffaletta

Portuguese loaf (from the Popular Bakery), you didn't think I'd just get one thing! I aspire to make bread like this, something I will work towards.

After getting the BBQ together, not really enough time to make a delicious dinner so....

Mufaletta!!! It's been quite some time since I've made one. Technically (I checked it out) a muffaletta contains: olives (a specific olive salad), cured meat, cheese. Covered!! Bacon is a cured meat, cheese, both brie (Sylvan Star) and a Aleppo pepper spiced halloumi. The last of the bell peppers, seared, some sun-dried tomato tapenade. Lastly spice sprouts and homemade mayo.

No, I didn't have all the specified meats and cheese for a muffaletta, so I got creative. Sometimes with food, it's the idea, taking that idea and making it your own. Or what your fridge happens to have inside of... more »

Eat, oh yeah, I'd forgotten about that. This cooked up quite quickly. While the steel-cut oatmeal cooked (about 1/2 hour, 4 - 1 ratio oatmeal to water), I sauteed some of the peaches I picked up at the farmers market. A quick deglazing of the pan at the very end with some white wine resulted in a sweet tart sauce. The flavour of the peaches wasn't overpowered, just enhanced.

Confit Duck

Started yesterday, finishing today. I've had to confit in batches as I'm low on duck fat. I'll be freezing the confit, not enough duck fat to store everything. #firstworldproblems

Lunch today at work, not pictures of everything as it gets a little hectic around serving time. Slowly building up a decent pantry for making lunch/dinners. Plates are coming back empty which is encouraging.

The date squares are for tomorrow's lunch as they were too hot to serve. Finally getting some baking done, which is difficult with little or no supplies. Giving it time though, I'll get there and kick up the desserts that are available.

Fruit and fruit salads are the norm for breakfasts, along with toast/raisin toast, yogurt.

The date squares are for tomorrow's lunch as they were too hot to serve. Finally getting some baking done, which is difficult with little or no supplies. Giving it time though, I'll get there and kick up the desserts that are available.

Fruit and fruit salads are the norm for breakfasts, along with toast/raisin toast, yogurt.

Brunch

Duck Fat Sauteed Purple Kale, Fried Egg, Sambal, Duck Crackling, Spicy Sprouts

As well as making brioche last night, I also prepped some duck up for confit. The duck is in the fridge getting all cuddly with salt and herbs. I hope to confit tomorrow after work. I actually cut a duck up, I'll be using all of the duck for the confit, perhaps a garbure soon. I tasted my first garbure in France, I must make more!

Fresh garlic from the farmers market was minced and is in the fridge now to make meals come together quicker. The older garlic I had was poached in olive oil, also resides in the fridge.

I sauteed the duck crackling, super crispy was the aim. Added some garlic, a little more duck fat, the kale, sauteed until the kale was wilted. Fried the egg, boom, done. A slice of brioche (not photographed) accompanied a quite delicious brunch.

Also, I haven't made brioche in months, achievement unlocked!!!

For these two loaves I made triple the recipe (just to give you an idea). I also used my Kitchen-Aid to make the brioche. Doable by hand, just a lot of arm strength required.

Brioche - Yield 1 small loaf

Butter your loaf pan well.

For the sponge:

Milk                       60 g
Yeast, Instant         6 g
Bread Flour           60 g
 
To finish the loaf:

eggs (3 large)       150 g

Salt                             6 g

Brioche - Yield 1 small loaf

Sponge Method

Warm the milk to lukewarm (110F), dissolve the yeast.  Add the flour and mix to make a sponge.  Let rise in a warm place until doubled.
Gradually mix in the eggs (one at a time until incorporated) and then the dry ingredients (using the paddle attachment) to make a soft dough.

Beat the butter in a little at a time until it is completely absorbed and the dough is smooth.  Dough will be very soft and sticky.
 
Fermentation

If the dough will require much handling, as for small brioche rolls, it is easiest to retard the dough overnight.  Making buns/small rolls while the dough is chilled reduces stickiness.

If the dough is to be deposited in loaf pans, it's stickiness and softness is not a problem, so it need not be retarded.  Ferment 20 minutes, then scale (weigh out if you've made multiple batches) and pan. Proof (covered with a wet, lint free cloth) for about 45 minutes to 1 hour.

Egg wash after proofing aka brush with a beaten egg.

Baking

400F (200C) for small rolls (about 10 minutes); 375F (190C) for loaves (about 25 minutes). Check the brioche about half way through the cooking time and turn the loaf pans. For these loaves, I had to turn my oven down to 350F for the last 10 minutes. You want it golden brown, not burnt. The brioche should sound hollow when you tap it, when it's finished baking.
 
Remove the brioche from the pan as soon as you remove it from the oven. Cool on a wire rack.

Pupusas

Salvadorian Chicken Enchilada, Salvadorian Tamales

The Pupusas Festival was busy and delicious! I waited in line for almost an hour for food. Completely worth it! Pupusas are so tasty, absolutely fabulous!

I was watching the ladies making the pupusas, skills, extreme skills! They made it look easy, I highly doubt that it's as easy as they made it look! I may attempt this sometime in the future, I'll have to scout out recipes first.

I adore trying food that is authentic, I then have a standard to meet when I attempt to make the food!

I do wish I had gotten a few more pupusas, sooooooooooooo good!

Saskatoon Scone

B.C. Freestone Peach

The scone was purchased from the farmers market. They make the best dam Saskatoon scone I've found to-date.

I had been talking to the B.C. fruit growers and was aware/anticipating the freestone's being at the market this week. They are so juicy and sweet, one of those the juice runs down your chin times!

Farmers market tomorrow, good thing, I'm out of quite a bit of fresh vegetables. I've been focused on the fruit lately, as it's the season, neglecting the veg component of my fridge.

A spicy Saskatoon chutney, saskatoons, juniper, balsamic vinegar, onions, thyme, urfa biber chili, dandelion honey and some italian parsley.

I might have squeed when I noticed the purple cabbage hiding in the door of the fridge. Originally I was just going to saute some onions, cabbage was spotted and added to the saute for some extra crunch.

Somehow the bison burger morphed into shades of purple, go figure...

I adore playing with flavours when I make jam. I also adore pieces of fruit in my jam, not like most store bought jam. Even the expensive ones.

The jars of jam are heading for the freezer, a delicious taste of summer when winter rolls around.

Smoked Trout New Potato Salad

Lemon Horseradish Cream Cheese Dressing

I had stumbled upon fresh horseradish root earlier in the week. I haven't managed to find (either from a friend or through a store) horseradish in years. Thrilled to bits to find it fresh.

Taking inspiration from a couple of Jamie Oliver recipes using smoked trout. A bit of an amalgamation of two separate recipes, based on what I happened to have in the fridge.

Ontario smoked trout is completely delicious!

My eyes did water while grating the horseradish, I'd forgotten how strong this stuff can be. Totally worth it!

Fresh chives, lemon juice and Italian parsley, a little cress sprout on top. Tangy, spicy, delish!!

I should definitely look at getting out some beef tomorrow, as beef and horseradish are a classic combo.

Out and about this morning, doing some running around for work (my volunteer time), acquiring some food donations.

I managed to take a trip to Baltyk Bakery/Deli. The bakery is lovely, so many items to try, I immediate focused on the poppyseed roll. A personal favourite. Some bread was also tucked into my shopping basket. Many items on the shelf, all interesting, lots that I was only able to tell what they were from the pictures.

The smoked Ontario trout is in my fridge and will be morphed into something (I think Jamie Oliver has a recipe) for dinner.

A very enjoyable morning exploring more of the food available in the city.

A Taste of Edmonton

There are few things that can get me out where it's crowded with lots of people, food being a major one. A few drops of rain didn't stop us from enjoying the myriad of tastes.

Going with a group allows you to chow down on many more of the tastes offered. A bite or two of each item left us all in food coma's (what a way to go).

Fav's of the night (for me): Duck Tots, Pork Tacos w/Kimchi Slaw & Lemon Thyme Aioli, BBQ Baby Back Ribs with Knobb Creek Maple Burbon, Foie Gras Peanut Butter and Jelly Sandwich, Banana Bread Pudding with Whipped Cream & Bruleed Banana and Peanut Butter Chocolate Pie with Caramel Whipped Cream Topping.

A Taste of Edmonton continues until the 25th of July. Highly recommend going!

Driving home and thinking of what to make for dinner, I remembered that Popular Bakery (yes, that's it's name) I would be passing by. I stopped and went in looking for those delicious little custard tarts (acquired). This bread was the next thing that caught my eye, after the tarts. It's gorgeous!

Now, what to do with it because being baked today, the bread will be at it's freshest, most delicious.

The Halloumi I had opened before, sitting there waiting to be used. I wanted some spice to the sammich so I decided to crust the halloumi with some spices (toasted cumin/aleppo pepper), giving it a middle-eastern vibe. The cress is peppery and compliments everything!

This sammich is duly noted as delicious and a keeper. Also, it's purty!
