At 16, however, Reed heard Jefferson Airplane's rootsy blues offshoot, Hot Tuna. His interest was rekindled big time. Acoustic guitar heroes John Fahey and Leo Kottke were studied, their styles absorbed but not imitated, and at this point things really begin to get interesting because, at 17, Reed, by now precociously proficient, played his first live gig, supporting beat poet Allen Ginsberg at the Smithsonian Institute. Just getting on a train from his native Armonk in New York State to Washington was a cool adventure. And it was just the first of many, not least of which was the one which resulted from his signing his first deal with a major record company, MCA, through the auspices of his friend, country singer-songwriter Lyle Lovett. Determined to make the most of this opportunity, Reed pushed himself to go beyond the standard fingerpicking styles he'd perfected. I realize that if I want to continue with the cake thing, a rotating cake stand will make for a much, much, much easier time of icing. Slightly frustrated trying to make everything even and work with the buttercream.

Buttercream, interesting experiment, simple recipe, only three ingredients: cream, butter and icing sugar. Well four if you consider the espresso powder I added to the cream for flavouring.

I can't see myself doing the intricate, needs a frame inside of it, style of cakes. Simple, fun basic cake, yeah.

More of this kind of baking may happen, more skills to develop.

Raspberry/Orange Brown Butter Muffins

Raspberries from the freezer, frozen when they were in season last year. Opening the freezer bag, the intense smell of raspberries filled the kitchen. Bringing the remembrance of summertime!

Big, plump, fragrant raspberries are such a treat this time of year. Using Cara cara orange zest and juice, the zest in the muffins. The juice, in a simple sugar/orange juice glaze, brushed on the hot muffins. I find when I zest a citrus fruit, I like to use the juice right away. No accidentally forgetting about the naked citrus in the fridge.

Using brown butter, brings a nutty deliciousness to the muffins.

Raspberry/Orange Brown Butter Muffins
Oven: 325 F

5 cups AP Flour
2 cups sugar
4 tbsp baking powder
2 tsp baking soda
zest of 1 orange

4 eggs, lightly beaten

Raspberry/Orange Brown Butter Muffins
Oven: 325 F

5 cups AP Flour
2 cups sugar

zest of 1 orange

4 eggs, lightly beaten
2 1/2 cups of buttermilk

1/2 lb of melted and cooled brown butter

Frozen raspberries as needed.

Whisk together the first 5 ingredients.

Mix the eggs and buttermilk together.

Add the wet to the dry mixture and mix well. Stir in the brown butter.

Brush your muffin tins with baking goop or muffin cups (baking goop is so much better). Place 1 tbsp of the muffin mix in the bottom of your muffin tin. Add 3 raspberries, another heaping tablespoon of muffin mix, more raspberries.

Bake for about 30 - 40 minutes or until a toothpick poked into the muffin, comes out clean.

While the muffins are baking, juice your orange, add a scant 1/8 - 1/4 cup of sugar and heat on the stove (in a pot) until the sugar is dissolved.

When your muffins are done baking, while they are still hot, brush with the orange glaze. Remove the muffins to a rack to cool.

Thin Crust Focaccia

Prosciutto, Kalamata Olives, Chili Olives, Mozza, Grana Padano, Arugula

Dinner last night. Leftover bread dough from baking on Sunday. I put two balls of dough into the fridge on Sunday, intent to make focaccia within the next two days. Results, delicious!!!

Topped with olives, prosciutto and cheese. One focaccia spicy, the other just salty.

I didn't even know that there was such a thing as thin crust focaccia, I do now.

Some interesting reading from Flour Water Salt Yeast on what the difference is between pizza and focaccia. Some may call this pizza (due to cheese), I'm not going to bother debating as delicious was the goal. Achievement unlocked!

Turkish Style Soup

Homemade Bread

Dinner last night. Leftover braising liquid can be used in different ways. To make a sauce, in this case, to make soup.

Full of flavour, all I needed to add was some rice (which cooked in the soup) and some cauliflower from the freezer (from the farmers market in season). I wasn't about to throw away a chicken stock/lamb based batch of goodness!

A drizzle of olive oil, as I removed the fat from the liquid when I took it out of the fridge.

Lazy and quick use of leftovers.

Preserved Meyer Lemon

Meyer Lemon Sauce

A couple of jars of preserved Meyer lemons, I'll make more if I can still find them at the grocery store. I prefer them over regular lemons, slightly less acidic, fragrant.

I'll be gifting a couple of jars of the Meyer lemon sauce, a combination of whole Meyer lemon, garlic, sea salt and olive oil. Really fabulous, another sauce I'd love to make more of, with pasta, should be outstanding. Thinking of mixing with some herbs or spices, time will tell.

Braised Turkish Style Lamb Shank

Dinner last night. Due to some people continually posting lamb shank recipes, I splurged on lamb shanks.

Braised in chicken stock with caramelized leeks, red onion, carrots, corriander, roasted cumin, maras pepper, smoked paprika, cinnamon stick, fresh thyme, bay leaf, garlic, ginger and tomato paste. Slow and low for a couple of hours until meltingly tender.

Wholewheat couscous to soak up the delicious braising liquid.

A dollop of a Meyer lemon sauce that is creamy, slightly tart, fragrant and salty.

Lamb shank, achievement unlocked!

Dinner last night. More playing around in the kitchen. Wings were on discount at the farmers market yesterday, so.....

Keeping with the citrus theme that seemed to be happening yesterday. Wings marinated in a combination of fresh orange juice and zest, honey, dijon, marmalade, olive oil and chili/garlic paste (yes I raided the fermenting sriracha again). The wings were baked in a hot oven, the marinade was brought to a boil and reduced. The sticky, finger licking sauce was amazing. The recipe needs a few tweaks to be outstanding.

I was asked to possibly make some chicken wings for a small event. I think this would be a perfect recipe to use. I'd love to grill these on a BBQ first, sauce added after.

Panzella, classic Italian deliciousness!!! No cucumbers in the house, greens worked... more »

Blood Orange Marmalade

I've been falling behind on jumping into Citrus season. Remedying this.

Playing around with a new technique for making marmalade, no pectin, still a fabulous set on the marmalade. I tried a short cut for zesting the peel, not really successful as there isn't quite enough of that bitter hit that you expect in a marmalade.

That being said, I bet this would be fabulous paired with an almond flour style cake. When cooking doesn't quite go as expected, turn, figure out another way to make use of what you've made.

I do have more citrus in the fridge, Valencia oranges and pink grapefruit. Will make a second stab at a wonderful marmalade today.

I adore the colour of this marmalade. Hopefully I can still find some more blood oranges to revisit this.

Duck Breast

Creamy Shiitake Gravy, Parsley Potato Mash

Dinner last night. Duck, I adore duck, it's been awhile. I prefer my duck breast cooked to medium-rare. Could have gotten a better crisp on the skin but not the end of the world. Just salt and pepper for seasoning. Seared, finished in a 400F oven, temped to 135F. Takes about 15 - 20 minutes.

The gravy, oh the gravy!!! Sauteed shiitake mushrooms, shallot, garlic, added red wine, ground corriander and chicken stock. Reduced the liquid by about two third's. Added cream and reduced until thick and bubbling. I added some Birch syrup for a lovely sweet tang.

Parsley potato mash, Nicola potatoes, mashed with butter and a little cream, stirred in some chopped Italian parsley just before serving.

Some shopping to do for work today, I should really get moving, after another cup of coffee....... more »

Lamb Kimchi Fried Rice

Dinner last night. The last meal using leftover lamb leg. Tasty one.

Nutri red carrots, picked up at the farmers market. I've never tried them before, super high in lycopene. They are dear though, I'll more than likely just purchase the regular mixed carrots in the future. Curiosity and all that...

Just a combination of carrots, bell peppers, diced lamb, garlic, ginger, kimchi and green onions. Basmati rice works well for stir frying.

Note to self, pick up some more regular soy sauce, the dark works in a pinch.

The last of the lamb leg was sent to the freezer, soup or stock will be made at some point.

Kimchi (along with other fermented foods) is good for stomach health. After having to take antibiotics for over two weeks, time to balance the flora again.

Uh hu....

A Double Big Mac actually has fewer calories and much less fat, although it does contain slightly more saturated fat. At 1,400 milligrams, the Caesar salad's salt content also beats the burger's.

Viola Desmond

I have never heard of this woman before today. Learning more about Canadian history.

She refused to leave a whites-only area of the Roseland Theatre and was unjustly convicted of a minor tax violation used to enforce segregation. Desmond's case is one of the most publicized incidents of racial discrimination in Canadian history and helped start the modern civil rights movement in Canada. Desmond acted nine years before the famed incident by civil-rights activist Rosa Parks, with whom Desmond is often compared. Desmond was granted a posthumous pardon, the first to be granted in Canada. The government of Nova Scotia also apologized for convicting her for tax evasion and acknowledged she was rightfully resisting racial discrimination.

German Style Doner

Dinner last night. I've tried doner's in a few places in the EU. I have to say my favourite doner's were eaten in Germany. Trying to recreate the same experience, exact, no. Still was delicious

Unless you have one of those meat shavers, thinly slicing is going to be as close as you can get. I sauteed the sliced lamb with some Aleppo pepper and roasted cumin.

Heated the pita bread up in a pan, brushed with olive oil.

A yogurt sauce containing, mashed garlic, finely chopped mint and a little lemon juice (super yummy).

The red cabbage was tossed with some lemon juice and olive oil. The flavour wasn't quite the same, next time I think vinegar would be the preferred choice. I remember more of a bite to... more »

Sunday dinner. I kept the lamb leg super simple, salt, pepper and olive oil. I knew there would be lot's of leftovers. Wanted to be able to take the flavour in many directions. Meltingly tender lamb, cooked medium.

Grilled Kimchi Cheese

Turkish Pickles

Dinner last night. I have to make more kimchi now, I'm good with that. I'm going to play with using different varieties of cabbage.

This has to be my all time favourite grilled cheese, craving on a regular basis. The cheese has varied along with the bread. This particular grilled cheese combined mozza and provolone, two mild and stringy cheeses. Fabulous combination with the kimchi as they let the kimchi's flavour really shine. Torpedo buns from the Italian Center (no bread making this week).

I would have liked the cheese on top of the grilled cheese a little darker, bubblier, the bread was beginning to singe. Next time, more cheese to prevent this.

Turkish pickles that I made a while ago, they just get more delicious as time goes on.

Potatoes, Parsnips, Carrots, Onion, Garlic, Hot Italian Sausage

Could not stand soft food anymore. Texture achieved!!!

So very simple, cut your veg into similar sized pieces. Toss with olive oil, salt and pepper. Roast in a 400F oven about an hour, stirring half way through.

The secret to this roasted dish, start with your potatoes and onions, after 1/2 hour, add in the carrots, parsnips, sausage and garlic. The veg that takes the longest to cook goes first, adding veg (whatever ones you have or choose) that takes less time to cook as you go.

You can use any combination of vegetable and sausage, take this to any cuisine by what you choose to roast.

FYI: use your oven timer or a timer. A lot of cooks do, if you're distracted with kids/internet/whatever, it's a good reminder.... more »

One of my issues with this situation is that the retailers (Walmart/Wholefoods) didn't know or care to know about their seafood suppliers until it was brought to their attention. Do I expect more from the places I purchase my food? Yes, yes I do.

The shrimp has been traced to processing factories in Thailand. These factories—really no more than sheds—are horrific places where children and adults work 16-hour days in hellish conditions with no chance of escape. And Whole Foods is hardly alone; the slave-peeled shrimp has been found in retail outlets and restaurants in all 50 states, according to the report. We’re talking about Walmart, Kroger, Dollar General, Petco (yup, the shrimp made its way into pet food), Red Lobster, and Olive Garden. Not to mention Safeway, Piggly Wiggly, and Albertsons. Coconut Chicken Noodle Soup

Dinner last night. Lot's of noodles in a homemade chicken stock, coconut milk, sauteed leeks, ginger, garlic, fish sauce, lime juice. This soup also made me realize I have to make up some curry paste as the soup would have been over the top with curry paste. Oh well, on the to-do list.

Stressful day yesterday, survived. Semi-stressful today, cracked molar to be removed, no way to save the tooth that doesn't involve lots of discomfort, money and in the end, probably not working. Funny faces in the mirror afterwards, which can be somewhat amusing.

Dinner last night. Had a craving, indulged it completely. I haven't had one of these kinds of potatoes in ages.

I don't own a microwave, cooked old school in the oven.

Bake the potato until tender (350F oven), cut in half, mix with the yummy fillings of your choice. Place mash back into the tater, add more cheese on top, bake another 25 - 30 minutes.

The good kind of potato, some will get it.

Cracklin' Cornbread, Arugula, Grana Padano

Dinner last night. Using up the leftovers from Sunday evening. I was going to make tortillas, was busy cleaning up the construction in the bathroom. The stack that is in the bathroom (a crack had appeared) had a section cut out and replaced. I wanted something quick and easy.

Pulled pork is usually served with some kind of sauce, didn't feel like making BBQ sauce from scratch, so....

A jar of Tomato Mostarda (which I had made earlier this year), reduced, pork added. A sweet tangy Italian style pulled pork resulted. Out of bread, ding, pork loves cornbread. A great recipe from Heritage by Sean Brock, cooks up in under 30 minutes (start to finish).

Some arugula for greens, Grana Padano for a little cheesy deliciousness!

"We were all, of course, very, very saddened that we were going to be losing them both. But at the same time, seeing them together and knowing that they wouldn't have wanted it any other way, was also one most beautiful experiences we've ever had the privilege to be a part of."

The hospital made a video, using actors to play the dying couple, to remind staff members just how much difference they can make in people's lives, said Dr. Curtis Johnston, facility medical director at the Royal Alex.

"It's reminder of why we went into health care in the first place," he said. "Every health-care professional went into it to make a difference to patients."

Paying the cost of protecting the public interest

The people who provided the hard data on the condition of Flint's water supply did so on their own time and out of pocket to forestall any claims of conflict of interest. The material costs for the project are around $150K, which does not include the cost of thousands of labor hours.

It would be lovely to see some of that cash come back to them for future projects. Please donate if you can, and let others know about good work being done by the Virginia Tech Foundation.

Lucky

Well, dinner is going to be late. What I thought was sewer gas (landlord was informed of a small problem, he was going to fix it tomorrow) turned out to be natural gas. Gas line to the water heater had snapped, it's been leaking natural gas most of the day. Son went out to get some drinks, came back in, said holy shit went it stinks badly of gas. Called the gas company, landlord, opened front and back doors and went outside.

Gas is off at the water heater, furnace is back on. Can easily heat water on the stove for a day or two. Camping in house! Old school!

Kudos to both Atco Gas and our landlord for getting here very quickly.

Black Death Porter Chocolate Cake

Espresso Buttercream, Smoky Salted Caramel

My first four layer high cake ever! Beer/chocolate/coffee/caramel, what's not to love.

I realize that if I want to continue with the cake thing, a rotating cake stand will make for a much, much, much easier time of icing. Slightly frustrated trying to make everything even and work with the buttercream.

Buttercream, interesting experiment, simple recipe, only three ingredients: cream, butter and icing sugar. Well four if you consider the espresso powder I added to the cream for flavouring.

I can't see myself doing the intricate, needs a frame inside of it, style of cakes. Simple, fun basic cake, yeah.

More of this kind of baking may happen, more skills to develop.

Black Death Porter Cake
 
1 1/2 cups Porter
12 ounces of butter
1 1/2 cups Dutch Processed Cocoa
3 cups AP Flour
2 3/4 cups sugar
3/4 tbsp. baking soda
1 1/2 tsp salt
1 cup plain yogurt (drained for 1 hour)
3 large eggs, room temp
 
Preheat your oven to 350F. Grease and flour (or use goop) 2 – 9” round cake pans (preferably with removable bottoms).

Melt the butter in the porter, when the butter is just melted (do not boil), whisk in the cocoa until the mixture is smooth.

Cool 5 minutes or so.

Whisk together the yogurt and eggs.

Whisk together the flour/sugar/baking soda and salt.

After the porter/butter/cocoa mixture has cooled, whisk in the yogurt/egg mixture.

Fold in the flour/sugar/baking soda/salt mixture. Mix until the batter is smooth.

Pour (equally) into the two 9” round pans.

Bake for about 35 – 40 minutes, until a toothpick placed in the center comes out clean.

Cool for 10 minutes in the pan and then remove to a cooling rack.

Make a buttercream icing. Make salted caramel. Frost and drizzle.

Filet of Coho Salmon with a Birch Syrup/Dijon Glaze, Arugula, Blood Oranges, Pickled Red Onions

Dinner last night. Experimenting with Amber Birch syrup for the first time. Went straight to the producers website and tried one of their recipes. Not bad, though the grainy dijon seemed to overpower the Birch syrup. Going to try and have to simplify or try different combinations to enhance and make the flavour of the Birch syrup really stand out.

Interesting and fun.

The coho salmon was delicious.

Prior to founding Hot Bread Kitchen, Waldman-Rodriguez was always an avid cook, but she spent a decade doing public policy and social justice work before seriously considering a bakery.

Preserving—a.k.a. the preparation of food so as to resist decomposition—is a reoccurring theme on the menus of ambitious restaurants around the world. Some say it’s just jumping on the bandwagon, and to some extent, that’s not completely untrue, BUT the technique is something Scandinavians and other cultures have done for centuries, long before this seemingly modern trend surfaced.

“Winter is coming” is not just a quote invented by American pop culture, but was once an actual way of life in these northerly climates.
