Some Wednesday morning Food Porn. Nothing too spectacular or complicated ... just beans and rice. Red beans, slow cooked with the trotter of a wild hog I've had in the freezer. Since it wasn't smoked or cured, I salted and peppered it before it went in. The broth still wasn't quite right, so I added a couple of tablespoons of molasses. Magic!

So, I couldn't resist buying this when I saw it in the store. It's Jack Daniels, 70% Rye, unaged. They use a bit of Rye in the usual JD, but this is the straight stuff.
It's 80 proof and clear - we're talking white lightning clear. Which simply points out that the color in whiskey shows up during aging.
The nose is astonishing. It smells like rye bread. The rye is apparent in a way that it isn't in any other rye I've experiences. Fascinating.
Of course, it's nearly undrinkable. The taste is rye and alcohol. There is nothing subtle about it, it's harsh and nasty. Which simply points out that aging whiskey is a Very Good Thing.
That said, I've been experimenting with it as the base for some cocktails, looking for something to mellow the alcohol bite and take some of the edge out, without destroying the really quit... more »

Well, it's Lent. For the last few years, we've been doing two things for Lent, neither of which have anything to do with religion, since I'm basically an atheist. But I'm a medieval culinary historian, and Lent had an enormous impact on the way folks ate in the Latin west, so ... chez moi, we do two things:
1) keep a Medieval(ish) Lenten fast as an exercise in Medieval foodways
2) use it as an excuse to get our charitable giving organized.

Charcuterie platter chez nous today. Home cured prosciutto style wild hog, home cured saucisson sec a l'ail, home cured olives, home made bread topped with home made fresh dill cheese, and roasted beets (alas not homegrown, from the CSA) topped with home made feta-style cheese.
For cocktails, a Negroni and a Vesper, each garnished with a bit of lemon (or lemon peel) from my aunt's garden. The Vesper features gin from Greenhook Ginsmiths.
