I know there are a lot of people who try and struggle to make a living doing what they love. People in all forms of art, music, illustration and design, even in my field, culinary "arts" people have to work extra just to put food on the table.

What I was up to last week

No, it's not Friday, it's Tuesday but I was at two tech conferences last week, #nextconf in Berlin and #tnw2013 conference in Amsterdam for #nextweb so I wasn't able to do my post last Friday.

Hey +Michael Ruhlman my sous chef made the poblano sausage from Charcuterie today at work! Pretty killer... Didnt do casings however, and did a coarse grind. Think we are going to stuff it into wontons and w/ some queso Blanco... Well you get the idea.
We won't serve them, though.
We'll just eat them ourselves.

Limoncello
Just in time for Independence Day

Only 8 weeks to wait for the best lemonade ever. Freshly squeezed lemons, Meyer Lemon simple syrup, carbonated water, and a shot (or two) of Limoncello over ice.

This batch is 375 mL Everclear, 125 mL vodka, 250 mL simple syrup, 250 mL freshly squeezed lemon juice, zest from 7 lemons. It gets strained in a couple weeks, then 6 more weeks to mellow, with maybe more lemon simple syrup if needed. Could be all vodka, but I want more kick and authenticity. It gets stored in the freezer so it will always be ready to drink.

Preserving Herbs

Here is a nifty little idea I found on the interwebs about preserving fresh herbs. 
If you have ones growing in your garden and you can't keep up with using them, use this trick, and it will help preserve the fresh taste instead of drying them!

Or maybe it is. These two buzzwords cause heated debate, and are a real concern for most people. I'm not a big proponent of say "organics" but I am definitely not for large corporations controlling our food supply, which sadly, they are.

This post goes beyond the picture. I am not just shouting "Stop Monsanto" or some such, just because it's a cause, or the trendy food thing to do.

If you can reasonably tell me that me purchasing heirloom seeds, never modified, growing them in my own fertilized soil, then hand picking each vegetable or fruit with my own hands and eating them the same day, is worse for me than say;

As promised to +Jake Croston , here is a pork recipe full of flavors and taste: pork tenderloins ("filets purs") gently simmered in juniper liquor and juniper berries. Deglaze with liquor, add fresh dairy cream, nutmeg and pepper, reheat the meat with the sauce, and serve with boiled potatoes. Voilà! A great recipe from the Low Countries, home of juniper liquor, "péket" in french speaking areas and "jenever" in Dutch speaking regions.

One of my favorite spring recipes - yes, the sun is shining and the temperatures are definitely up!
Slow-cooked lamb (hence the pink flesh, so softit melts in your mouth), green asparagus - "queen of the vegetables" -, and a home-made "tapenade" - a tasty paste made of black olives, almonds and thyme to enhance the flavor of the meat.

Poke Chops

Didn't feel like smoking the brisket tonight, so quickly I dry-brined hand cut chops w/ fresh rosemary, onion, garlic, and meyer lemon.

Grilled at 450, with smoked corn on teh cobz and asparagus drizzled w/ blood orange olive oil.
