Scape Season
If you've been hitting up the farmer's markets as of late, you might have noticed some very long, curly, scallion-like vegetables hanging about. What are they?
Scapes! Scapes are the long stalks that grow from a garlic bulb. Normally, they are snipped of in order to help the bulbs grow to their full potential, but scapes are just as useful in the kitchen as the traditional garlic plants.
Scapes still have a garlicky flavor, but not quite as potent as cloves. Chop them up like scallions and toss them on pizza, with some shaved Parmigiano Reggiano. Brush some oil over the whole stalk, sprinkle on a little salt and pepper, and grill them. Or you can whip up some yummy pesto like in this recipe!
