Comparing this year to those long gone,
Is best avoided at this point in time,
But with a dram of single malt in hand,
Getting a year older doesn't seem so bad.

Time for the renewal to begin anew

Was at a cafe today giving out a link to my Melbourne cafe map and realised that now we are in 2016, all my maps are showing their age....

And so... the mission has begun anew to renew my Sydney map (and the other ones in due course). This map is still a work in progress, and so some cafes may need to be added, changed or rearranged... but at least I've made a start.

Just finished listening to "Seveneves" by Neil Stephenson, and for a book that I thoroughly enjoyed the beginning, middle and even the start of the end, perhaps because I enjoyed it so much, it didn't finish in a way that seemed to complete the story. Certainly worth a read, especially if you are curious what would happen if the moon suddenly exploded into 7 pieces, but also because this is more of two stories than one.

Happy public holiday day.!!!

For while I wish that this day was used to reflect on the lives, cultures, successes and failures of this wonderful country, with a focus on how through education, infrastructure and aspiration goals we can all strive to make it a better place for future Australians... we do a much better job having a BBQ, a brew or 6, throwing on those apathetic blinders, and having a ripper of a public holiday.

So I guess... if thinking too much isn't your thing, enjoy you day off, and remember that while Australia is (very) likely the best country to live in, it is only so because of the millions of lives, their experiences and sacrifices that we have what we have.

Mate, have a ripper of a public holiday day. 

Happy public holiday day.!!!

New Years seen through a dram of scotch

Starring at a world lit with fireworks and booze,
Shared with friends or family for those lucky enough to choose,
We've reached the end of yet another year,
That we've made it this far is worth at least a cheer... or a beer.

It's been a hard one for many, myself included,
Of unmet expectations only slightly deluded,
Where expected highs postponed their appearance,
With fingertips left raw as they grasped the meaningless.

Yet not all was lost this orbit of the sun,
From the infectious smiles of both my sons,
To the time shared with friends and family,
While fleeting there were magical moments a plenty.

Perhaps navel gazing with a dram in hand,
Was not the most enlightened plan, for this man,
As belly lint a plenty I was bound to find, ... more »

But New Years thankfully runs a bit deeper,

I raise my glass and bow my head,
Wishing you and yours a happy new year,

"Yoi otoshi wo" (良いお年を) or "hope you have ever a great year ahead" is the perfect sentiment for this time of year. Having survived all that 2015 could throw, looking ahead to the opportunities that a new year can (and hopefully will) bring is more than encouraging.

So let me get in a few hours early and wish you and yours a senbloodysational new year. May it be filled with the spice and vigor of life that makes it a memorable one. May your coffee cup flow over with deliciousness, your friends and family stay safe, and you take the time required to suck (and saviour) the marrow of life.

Fridley's 4hr slow roasted chicken recipe

1. Rinse off a free range chook, and brine overnight. My brine had a tablespoon of sugar, more than a few tablespoons of salt, some thyme and black pepper corns. You can pretty much do what you like and there are quite a few recipes online. Just make sue the container is sealed and the chicken is fully immersed.

2. The next morning remove the chicken from the brine and put into another container with plain water for 30min,and then repeat the process (this helps remove any excessive amounts of salt.

3. In a large pot, fill 3/4 full with water and bring to the boil. Whole you're waiting, prepare an ice bath for the chicken. Then using tongs, put the chicken into the boiling water for 30sec, remove and put into the ice bath. Once the water has reboiled and the chicken is cool, repeat for 30sec and cool again. This helps kill of bacteria and preps the chicken skin to be crisp and delicious.

4. Pat the chicken dry, and then put on a plate in the fridge to dry off. Try and do this for at least a few hours. Gives you time to peal and chop the potatoes, carrots, celery, onions,  garlic and pumpkin.

5. 5hrs before you are wanting to serve the chicken, remove the chicken from the fridge and let warm up a bit while you get ready. Preheat the over to 65 degrees C, and throw the onion, garlic, some of the carrots and celery into a roasting pan. This is you future gravy. Then cover the roasting pan with a pizza tray, or something that will expose the chicken to the most even amount of heat. Boil some water and throw in a whole lemon. Give it a min, and then pull out with tongs, and stab all over with a fork. Then shove the whole thing up the chooks butt. Put this collection into the oven, making sure there's enough room at the bottom of the oven for another baking tray for the potatoes, pumpkin, carrots and any other veg you like roasted. This second tray I normally don't put in until the 2nd hour, but at 65 degrees it won't matter too much.

6. At the 3.5hr mark, pull the chicken out and use a meat thermometer to make sure the thickest part of the chicken breast is at 65-70degrees. If it is, you chicken is done, almost. The skin isn't crispy yet, so rub it with some butter, turn the over to Max, and throw it back into the over until crisp (10min or so). At this point you need to keep an eye on your veg to turn and maybe cover with a bit more oil, butter, salt, pepper etc.

7. When the chicken is crisp, take out of the oven, remove the lemon, pour any extra juices into the gravy veg pan, and then rest it under foil on a plate ready to serve. The gravy pan with all the veg should be ready for a splash of white wine to deglaze, and if you have it, a bit of chicken or veg stock will help stretch the amount of gravy you can make. It none is available, splash in a cup or so of water and let simmer on the stove top. As it is boiling away, your roast veg should be ready to come out and throw next to the chook.

8. Mash or blitz the gravy veg, and then strain into a pot, discarding solids. Grab a heaped spoon of plain flour, and equal parts butter and whisk over heat until it thickens.

9. Serve and eat. ___

Oh the joys of boys.
When itchy heads they seem to share,
it's time again for the family to bear,
a tea tree oil smelling concoction,
and a shower cap to keep the fumes in.
Then followed by the oh so natural,
"ow"s, howls, whimpers and yelps as knots pull,
and hair is combed thoroughly from back to front,
to clean of any "itches" or their baby bumps.
Once again the itches are gone,
cleaned from heads, beds and hats and other hidey holes,
Til next week they get another good dose,
Any hopefully learn to keep their distance.

Fridley's Pho-buttermilk Pancake Recipe

While I prefer waffles on Sundays, the call was put in for pancakes. So here are my pho-buttermilk fluffy pancakes.

Ingredients
-1.5 cups of milk
-4tbl spoons of vinegar
-2 cups plain flour
-4tbl spoons of sugar
-2tsp baking powder
-1tsp baking soda
-4tbl spoons melted butter
-2 eggs

Steps
1. Mix milk and vinegar and set aside for 5min
2. Combine dry ingredients and sift into a large bowl.
3. Whisk eggs and melted butter, then mix in your "buttermilk". Then pour on the dry ingredients and whisk until lumps are gone.
4. COOK PANCAKES (warm pan, spray oil, cook til bubbles then flip)

Mapmaker mapmaker make me a map...

So, I have heard nothing more about MapMaker reopening up in Australia, and nothing about what is happening on the regional feeds side of things, but I can assume that it is moving ahead...?? O_o

Trying to update business information is more of a stab in the dark rather than anything professional, and convincing businesses to claim their own listing and await a postcard that will arrive ....eventually... isn't really proving to be a winner.

Any more news on this front that I am missing?

Podcast addict...?? This might help (you listen to more podcasts

Sure I have been using PocketCasts (https://play.google.com/store/apps/details?id=au.com.shiftyjelly.pocketcasts) for a while now, and yes I always speed up the podcasts I listen to, and long press the play of video podcasts so that I can speed up the videos I watch in an external program... but that's not what I am happy with today.

While I can't prove anything, being told that PocketCasts has removed over 21 yrs hrs of silence from the podcasts I listen to (with magic) is pretty amazing. It is a feature that you don't know you want/need but it doss allow me to squeeze in a few more podcasts, so that has to be good... right...??
