A side of radioactivity with your orange, sir?

You all know that I am not big on facts & figures from my recipes - far more interested in intuition & the gist of things.  But my feelings are such a jumble right now that (bear with me, I will get there!) it is easier to share some facts:

Scary (so far):

- Fact: the tumor is the size of an orange and it is malignant
- Fact: we do not know if & how far it has spread
- Fact: CT scan is scheduled for Thursday to tell us if & how far it has spread
- Fact: One CT scan is equivalent of 5000 x-rays
- Fact: 2% of cancers in the US are caused by CT scans
- Fact: in order for the CT scan to do its job, you have to be injected with various poisons, including radioactivity & iodine
- Fact: only after the CT scan will we be able to start scheduling surgery, chemo & the... more »

Does medical marijuana help with the side-effects of cancer treatment?

My California friends are adamant that, by being treated in France, I miss out on this "essential source of relief" from the hellfire of cancer therapy.

I am told that medical marijuana:
- is a great all around analgesic
- it suppresses nausea
- it calms the digestive system overall
- it increases appetite

Is it being prescribed to cancer patients?
Does anyone have some experience with this?
What about is own negative side effects?

(I refuse to Google this & find 1 trillion conflicting results).

Blue Is the Warmest Colour

My mind, never quite linear, is now, after months of cancer treatment, even more "all over the place" than usual (in French: "n'importe quoi").

I refuse to reign me in.

In principle, like everyone facing a life-threatening situation, I have been in a prolonged "state of shock" and, therefore, not quite "all there".

Part of me experiences this as a lack of trust in my faculties (was I rude? did I leave the lights on? did I fly my button?)

But part of me finds this freeing!  There is a freedom in becoming a bit spacey, error-prone, soft-in-the-head, clumsy, foolish, forgetful, rambling.  And it is easier to be that way in rural France than in techy Palo Alto.

Last one

I feel like some kind of skinny furry animal coming out of his hibernation hole.  
Bleary-eyed, uneasy on my feet, scratching my head, I march towards the blinding light.  To realize, with swelling joy and trembling chest THAT I HAVE ONLY 1 (ONE) CHEMO LEFT!!!

And if that is not enough good news to make me smile again, then nothing is.

On December 22:
- I will go to the hospital with my latest blood tests
- The oncologist will consult the tests & talk to me & determine the dosage
- They will drip the medicine, for 2 hours, that will cover the effects of the chemo so I don't get immediately violently sick
- And, then, they will connect me to the electronic "biberon" (french for "baby bottle") that will slowly (for 48 hours) drip my final dose of the chemo poison (too toxic to administer moreq... more »

I dream of empty tables, without food.  In these dreams, I am seated around friends, in excellent spirits: we talk, we jest, we expound and laugh, all around the table without a single morsel of food in the empty plates, serving bowls, soup tureens.  Without a single morsel of food passing through our lips.

After years of being supportive to people struggling to lose weight, I am full of newly-gained compassion & affinity with those trying to gain weight.

Because I am of them now.

For the first time in my life, I can no longer say "I love food".  In fact, I am trying very very hard, not to allow the opposite phrase to take hold of my brain (& stomach).

It worked!  Slowly, horribly, shovel after shovel, I gained back 4 kg (9 lbs).  But I still have 12 kg (26 lbs) to gain before I get to pre-cancer levels.  Yuck!  (When they hear this, my friends in France reply: "Can I give you some of mine?)

I have as much enthusiasm for the dinner chair, as for that of the dentist.  My best wishes to all of you out there that share in the same struggle: eating with no appetite...

86% of patients with my cancer are unlucky enough to have a positive result in the biopsy of the removed tumor (meaning: there is still cancer in the tumor that was removed). Those patients must endure a further 3 months of chemo, "just in case". (The remaining 14% test negative and need no chemo).

I am one of the unlucky majority.

So I was prepared, as much as anyone can be prepared for this ordeal of slow systematic poisoning.
Difficult moments, difficult days and nights...
It is a battle, not least against a sense of futility, that must not take root.

This won't hurt a bit: 21 times

For 3 weeks after surgery I needed to have a daily shot of some anti-coagulant (= a chemical that prevents the blood from forming clots which, after surgery, can be dangerous).

I had two choices:
- have someone give me the shot
- do it myself

I opted for the latter, this being a subcutaneous injection (= into the fat layer between skin & muscle; as with insulin shots for diabetics).

I did it, but it was slightly freaky, especially since, at 64kg, finding "the fat layer" is not trivial.

Have you ever given yourself a shot?  Would you?

(PS It has been 6 weeks since surgery and I am just rediscovering my bearings)

Waking up after surgery is supposed to be, for days, debilitatingly painful. France, thankfully, has a zero pain policy, so I will be connected to a morphine pump: every time the pain mounts to intolerable, I will give it a little squeeze & morphine will drip straight into my veins.

Perhaps this will prove to be even... enjoyable? (Dream on, nomad).

If all goes well, I will be out of the hospital around September 10. It will take another two months until I can move around freely again (and there will be other, smaller operations, during that time).

(When I first posted today, I noticed that my last post was almost 2 months old!!! I had thought it only 3 weeks! Time flies - I hope the next 2 months will fly by even faster... )

- every day, I pass a couple of hours at a waiting room (with a women to men ratio of 3:1) where women at various stages of baldness, emaciation & general decrepitude are leafing through magazines where supermodels give them their age-old wisdom about life's essentials:

- tanning
- losing weight
- cellulite
- his erections / Viagra
- etc

Ah, the mysterious depths of human nature...

Honey, we shrunk Dimitri: Part 5

Thankfully, Marseille has a newly-opened Uniqlo, the Japanese retailer that is my go-to place for basic clothes. Packed with linen pants, linen shirts & T's, for a few hours, I left (mentally) hospital & city behind for the hushed tones of the land of the rising sun.

To top it all, I had a little sushi for lunch: you can see me leaning forward to catch my bald pate in the mirror of the sushi counter. First bald selfie...

Now I look trim once again & no one mistakes me for a vagabond!

American tourists

With the arrival of July, the city is starting to reverberate with the pleasant chirping of American accents. Apparently, Marseille must be on some sort of backpacker circuit, judging by the parade of first-time beards & cut-off jeans.
I chatted with two of them yesterday (my brother nomads! I was so happy to talk American!), at a viewpoint high above the city.
- "Wow!", they asked, " you live here dude? Can we crash at your pad?"
- "Actually, I am kind of a health tourist", I reply.
- "That's really cool, man".

So there you have it: I have been rebaptized, made cool once again, "out of the mouths of babes".

- "Wow!", they asked, " you live here dude? Can we crash at your pad?"
- "Actually, I am kind of a health tourist", I reply.
- "That's really cool, man".

So there you have it: I have been rebaptized, made cool once again, "out of the mouths of babes".

Microwaving the orange

Let's say it takes 25 seconds to microwave an egg to your favorite hardness.
You can accomplish that by:
- zapping it for the full 25 seconds
or,
- you can zap it for just 1 second and do it 25 times.

Why do it the latter, more complicated way?

Bodies Part 1: Lean/Mean or Curvaceous/Voluptuous?

Stroll through any western Mediterranean city and you can't miss it: the preference for "fuller" bodies, bodies that exude sensuality. Fleshier... and... yes, with more fat, preferably strategically placed.

As you move north, the aesthetics change towards bodies that look more like "healthy", well-oiled gym-machines.

The southern love of "love handles", for example, freaks out my California friends that spend their lives trying to crunch theirs away.

- my head gets cold easily
- upon shaving, I discovered my own Gorbachev-style head stain
- I don't know what to do with all these rubber-bands that used to keep my ponytail in place

Walking around the city today, I practically crashed into the solution: this fabulous wig. I run after her to ask her where she bought it from but, for some reason, she looked at me terrified and threatened to call the police.

I have become "Small".

It must have been about 8 years since I went shopping. I mean "really" shopping: not just a quick jolt to replace a sneaker that has started to smile. I mean shopping when you walk out with bags (bagS!!!), shopping as when you are about to move to a country with different meteorology.

Basically: wardrobe replacement.

I am endlessly confused with numerical sizing systems: France has its own, different from the European standard (surprised?) which is, of course, different from the American one.

But I do like the XS,S,M,L,XL,XXL system, because I know I am mostly "L" and rarely "M". Easy.

So this is what my first chemotherapy was like:
- it started at 9:30 pm with one chemical drip into my heart after another
- by 4:30 am, we had finished dripping 3 chemicals and I was connected to the last one, which would drip for 46 hours
- I "woke up" 3 hours later, feeling like I had been hit by a truck. And, a moment later, I realized that there was a live seagull inside me, frantically flapping his wings trying to escape
- there was only one thing clear to me: that I cannot and should not try to fight this. So I turned myself into a tiny ball, put on eye mask and ear plugs, started my deepest yoga breathing and accepted it all, the pain, the seagull, the nausea, the fear, all.
- I thought I opened my eyes one hour later: it was actually 5 hours later! The angry seagull had turned into a flock of butterflies. There was no longer an elephant sitting on my head -... more »

Snakes and ladders

Do you all know this game?
- you roll the dice to march your pawn
- if you fall into a square with a ladder, you go up the ladder: a shortcut to your destination
- if you fall into a square with a snake, you slide down the snake's gut, back to an earlier stage of your journey: you lose ground

It is essential that I stop thinking of ladders and learn to accept snakes. Stoically. And I must do this quickly, while remembering that there is no shortcut to it, either.

Just had my first hospital dinner of minestrone and jambon. It was left on a tray waiting for me, when I was wheeled back to my room from surgery. The operation, under local anesthesia, was not exactly "nothing". For 30 minutes you feel someone cutting and pulling at the base of your neck, next to the carotid and then slide 15cm of tube inside your vein towards your heart. Then, they slice open your upper breast to create a small nest under your skin where the little catheter will reside, for months, waiting thirstily for the next injection of chemicals. Post-operation, a feel a bit like I was bitten by a vampire.
Chemotherapy starts tomorrow morning.

My favorite toilet sign (so far)

You may think that I am already going nuts even though the medication has not started yet. But I have to confess: for the first time in my life, I identified with the sign to the "Men's Room"!

There is a sense of the tentative and the hesitant in this graphic which matches my current attitude (and outlook). Instead of the usual rigid, militaristic posture, this one, to me, feels more like someone that, upon exiting his front door, poses to wonder: "should I bring an umbrella along today?"

With its coral-like lace lattice of steel-reinforced concrete, the new Marseille museum ("Mucem") is pretty as a jewelry box.
Alas, the contents do no justice to the lush gift wrap: the permanent collection is more decorative than illuminating. The concept of the "defining forces of Mediterranean culture" frays quickly and the exhibits feel cluttered and inconsequential. Is that, perhaps, their intended metaphor for "Mediterranean culture"?
Nomad recommends skipping the exhibits altogether. Instead, grab a chaise longue at the fabulous rooftop cafeteria and enjoy the breathtaking 360° views of the old port, through the coral lattice.

A side of radioactivity with your orange, sir?

You all know that I am not big on facts & figures from my recipes - far more interested in intuition & the gist of things.  But my feelings are such a jumble right now that (bear with me, I will get there!) it is easier to share some facts:

Scary (so far):

- Fact: the tumor is the size of an orange and it is malignant
- Fact: we do not know if & how far it has spread
- Fact: CT scan is scheduled for Thursday to tell us if & how far it has spread
- Fact: One CT scan is equivalent of 5000 x-rays
- Fact: 2% of cancers in the US are caused by CT scans
- Fact: in order for the CT scan to do its job, you have to be injected with various poisons, including radioactivity & iodine

Make your own wasabi sauce for sushi (super-easy)

Wasabi is the green "sauce" you put on your sushi.  It is devilishly hot in a way that is entirely different from chili / hot peppers.  
You want to use just a little bit: if you overdo it, it will feel ice hot, I cannot describe it a better way.  Your nostrils will feel both burning & icy at the same time.  What happens to me is that I feel that the top of my head is sweating (or, exploding), time stands still & I think: "will I ever breathe normally again?"

(Purists will probably scoff with what I sometimes do with wasabi: I mix it with soy sauce, a heavenly salty/spicy mix, and dip the sushi right in.  Please feel free to despise this.  I am not the only one to sin thus.  A Japanese friend told me that the emperor of Japan does it too when no one is watching.)

Black thai sticky rice with coconut milk

Just top with some freshly peeled mangoes for one of the easiest & most delicious desserts around.

Westerners often love rice pudding - but that is where our exposure to "rice in desserts" pretty much extends to.

If you want to go just a bit further, this is the recipe for you.

Below is the very simplest version.  It is hard to screw it up because you will cook the rice twice.  But, as with risotto, you have to be INVOLVED in cooking this, you just don't measure the ingredients & let it all happen on its own:

- rinse rice & let soak overnight (so that it will cook faster)
- boil rice in twice the amount of water, as you would normally cook rice (start on high heat & reduce as water evaporates)
- when the water has been absorbed, taste for consistency(... more »

- when the water has been absorbed, taste for consistency (you do not want it to mushy, you want a bit of crunch on the outside; err on the side of crunchy versus mushy)
- fluff with a fork and let cool covered
- add coconut milk & brown sugar to your rice to taste: this means, add as much sugar as you like: from just a hint of sweetness to total syrupy decadence
- boil it all once again, until it thickens to a nice consistency: when it cools, you want it to hold together, not be runny
- how much coconut milk depends on how crunchy you boiled the rice in the first step: this is kind of a "risotto" phase: you keep adding until it is just right
- the more crunchy you got it, the more the coconut milk you will evaporate during the second cooking, the more intense the coconut flavor
- pour in a dish & let cool & then refrigerate
- cut in slices, top with mangoes & dribble some more cold coconut cream or ice cream!!!

Alternatives:
- no mangoes?  try peaches, even canned
- no coconut milk? try sweet condensed milk

How does he do it? / Paul B.'s "perfect" poached egg

I believe it was listed as "poached" (but there was too much champagne for me to be clear on this).
But even if it was boiled (I doubt they would serve boiled eggs in a Bocuse), it is still "perfect" - when I peel boiled eggs, they look like the surface of the moon.

In either case, I really love eggs, and I like to serve them like this, but i want the yolk just runny enough to make a mess to scoop with my bread without the white being at all queasy.  

What are your egg tricks for poached or boiled perfection?

Playfully NOT a gay statue

One of the highlights of the new Lyon riverside artsy promenade is this statue by the Scandinavian duo Elmgreen and Dragset.  I like its playfulness and ambiguity.  

- On the one hand it subverts the classic image of the man carrying a woman and winks at conservative Lyon who perhaps would wince a bit at a homosexual statue in such a key location (in front of the Palace of Justice!)

- On the other hand, if you look at it closely or notice its title ("The weight of One Self"), you realize that it is all a metaphor and the man is actually carrying himself!

HAPPY FIRST BIRTHDAY FOODIES+!!!

What a first year it has been!

I started using Google+ “properly” in January of this year but it wasn’t until springtime that I stumbled across Foodies+. After numerous disappointing communities, Foodies+ was like a breath of fresh air and I was immediately drawn to it – wow, I thought, people actually talk to each other in this community!

I remember reading the rules and going yep, yep, absolutely – I was just amazed at how almost every single one of those rules echoed my sentiments about what makes a good Google+ community.

BUT it took me a whole month of conversing before I dared post a recipe! A whole month of gate crashing conversations & talking to people as if I’d known them all my life! 

For me, personally, it’s been a great few months, I’ve made so many good friends, people with whom I chat to at all hours about food, life and nothing in particular! And I am constantly learning too!

All this thanks to +nomad dimitri who, exactly 1 year ago, had the foresight to set up this glorious community, who had the foresight to lay down and follow through what some consider draconian rules and who gave us a global platform to do what we all essentially love to do – cook, eat and talk ! Thanks D! 

Another great thing about Foodies+ is its dynamism. 
Things change and move so often here, my head never stops spinning! One minute I’m a new member, next, an Editor, then a Moderator and now, it seems that I've become Nomad's personal assistant while he continues with his jet setting lifestyle! I'm sure all that talk about being jet lagged is just him making us think it's a hard life, all that travelling!

And you know what? Nomad Dimitri is hinting at a bigger and better Foodies+ in 2014! This is a community that is constantly moving and evolving, where new ideas & projects are constantly being thought up and realised. We are always on the lookout for new talent and there is always room for anyone who is enthusiastic and wants to cook and play with us! 

FOODIES+ is definitely the place to be!

Airport on fire as I leave Istanbul!

Just as the airplane was taking off I saw smoke and fire.  It felt like those scenes in a Bond movie when the whole place explodes in flames just as he makes his narrow escape.

Probably not a big deal but the plume of smoke looked huge from the sky and, for once, I was very happy to be safely on board.

In this interregnum before the end of the year's festivities, people feel suspended, sometimes melancholy.  There is a sense that with the end of another year, big things are coming while... on the other hand, nothing really may fundamentally change.

It is like time waiting at an airport, interstitial time, neither here nor there...

What's behind the "Dikdik Palace"?

First-time visitors to Istanbul are often surprised at the number of excellent (and, often, whimsical) western-looking buildings in several of the city's old neighborhoods.  In fact, the plaques commemorating the architect still attached to many of these buildings, also often display western names.

It is a moment in history.  During the late 19th & the early 20th century, as the Ottoman Empire was crumbling, westernization became all the rage.  Anyone with means, including the last sultans, had to live in western style, with western conveniences.  And, if you really wanted to be fashionable, western is spelled "french": language, dress, style, manners.

What's a tall Italian doing in Istanbul?

One of the most colorful cities in the world, modern Istanbul is a tapestry of layer upon layer of history.  In fact, what you see in the photo used to be an Italian city, called Galata.

Galata was a colony of the Republic of Genoa between 1273 and 1453. The famous Galata Tower (that you see on the upper right part of the photo) was built by the Genoese in 1348 at the northernmost and highest point of the citadel.

Think of it as Hong Kong in the Mediterranean.

In the fall, not only is the sun less strong but, crucially, it is LOWER in the sky.  This means that the light comes at an angle, thereby:
- creating longer shadows
- becoming more filtered (by clouds, pollution etc) to produce different light effects

Additionally, clouds & fog & muted light make color richer, truer.

Istanbul's gloomy autumn light, with views of the sea from most hills makes the city even more mysterious & magical than it already is!

She became visibly uneasy...
... when I sat on the empty seat next to her on the tramway, the only one left.

She pulled away from me, making sure that no part of her floor-length coat (along with the head-scarf, the other essential part of the outfit she has to wear outside her home) was in contact with me.  In turn, I made myself as tiny as possible on my seat.

When, later during the ride, my mobile phone rang and she heard me speaking English, she relaxed a bit: a foreigner, especially a Westerner, is deemed safer since he is ignorant of the ground rules for gender relations.

I like choice.  But it does make me a bit sad to make people uncomfortable just by being a man.

Fish with a side of melancholy

Istanbul turns melancholy in autumn: there is plenty of rain, the leaves from the great plane trees curl up & fall, everyone returns to dark clothes (as in New York), the smell of roasted chestnuts pervades the little alleys.

It is also the season for great seafood, as the fish migration between the Black Sea & the Aegean intensifies much to the profit of Istanbul which sits in the straits between the two seas.

Tea and coffins

In Istanbul, there is so much life in the streets and the Turks love tea so much, that there are tea-houses everywhere - this one is attached to a downtown mosque and, sometimes, burial services are carried out between the tables!

Etiquette: 
- Tea is always served in a little saucer, often flower-shaped itself, with a couple of sugarcubes & a tiny spoon
- You can have the full-blast bitter version, or have it diluted per your specifications
- The teaglass has no handle & the liquid is scalding.  So you have to hold it from the very rim, with the tips of your fingers: drinking it as hot as possible without burning your fingers is part of the ritual...

Taking the (taxi) boat to the office.

- Imagine seeing dolphins play as you cross the bridge to the grocery store?
- Imagine fishing your dinner on the way home?

There are many coastal cities around the world but very few have the breathtaking geography of Istanbul, Rio de Janeiro & Hong Kong.  These cities are truly inter-weaved with their wet element in a way that extends the very idea of each city into the water.

Yes, Los Angeles, Marseille, Barcelona & Naples are on the water but the water is not a part of the city in quite the same way.  It helps that all three of our water cities are hilly & have rich convoluted coasts, bays & estuaries, making the sea visible from multiple vantage points, in ways that are inescapable.

"No, I am not cold at all!  But do you have any salt for me?"

I often hike by a small sheep farm around these parts.  Both the sheep & the farmer are happy this autumn because it has been unusually warm, so these guys can stay out & feast on grass much longer than usual.

I am always amazed how they seem to be totally undisturbed by cold & rain.  I guess the answer is their rich, tough, greasy wool sweaters.  Example:  I am watching them eating peacefully.  Suddenly, there is a squall & cold rain starts pounding us.  Not a single reaction: they just keep chewing on the grass while I frantically rummage through my backpack for rain-gear.

They always approach me when I walk past their enclosure, with these expecting glances.  What do they want from me?  Is it salt, like cows do?  Or, are they just being friendly?
