Cannoli Cream 1 cup marscapone 1 cup ricotta cheese 1/3 cup super fine sugar 1 tbsp lime zest (lemon or orange is ok) 1 tsp pure vanilla extract 1/2 cup bitter sweet chocolate (chopped into small bits, or use mini chocolate chips) 12 large cannoli shells 1. Drain ricotta very very well, it must be extremely dry, if possible make your own ricotta. 2. Mix ricotta and mascarpone together until blended, do not overmix 3. Add in superfine sugar, lime zest, vanilla, and mix until blended. 4. Add in chocolate and stir to blend 5. Place cream mixture into refrigerator until ready to use 6. Place cannoli cream into pastry bag (or ziplock bag with end snipped off) and pipe into cannoli shells. The secret to keeping your cannoli filling thick and not having it get watery is using Superfine Sugar, Most recipes will call for confectioners sugar, but an old Italian Grandmother told me her secret, and it works! Just remember once you've shared this cake with your family and friends they're going to be begging you to make it again and again! I've included the recipe so you can bake along with me! Pumpkin Crunch Cake adapted from a recipe by Good Housekeeping Ingredients: Crunch Topping: 3 Cups (450 g) walnuts, finely chopped 3 Cups (360 g) vanilla wafers (about 75 cookies) 3 Cups (540 g) brown sugar 12 oz (340 g) butter Pumpkin Crunch Cake: using 4 standard 9 inch (23 cm) cake pans 1 1/4 (250 g) cup sugar 6 oz (168 g) softened butter 1 16 oz (425 g) can solid pack pumpkin (not pumpkin pie mix) 2 1/2 ( 300 g) Cups flour 1/2 Cup (96 g) Greek yogurt 1 Tablespoon (15 ml) pure vanilla 1 Tablespoon (15 g) pumpkin pie spice 2 1/4 Teaspoons( 12 g) baking powder 3/4 Teaspoon (4 g) baking soda 1/2 Teaspoon (2.5) Salt 4 Large Eggs Cream Cheese Frosting: 24 oz (680 g) cream cheese 8 oz (227 g) softened butter 2 cups (150 g) confectioners sugar 1 Tablespoon (15 ml) pure vanilla Instructions: Crunch Topping: Melt Butter In a food processor, pulse cookies to a fine crumb Then Pulse walnuts to a fine chop Add in Brown Sugar and mix well. Add in Melted Butter and blend together. Divide mixture into 4 Coated Cake Pans (One very full cup per pan), pressing into bottom and spreading it evenly into the cake pans. Reserve about 2 cups of the mixture which will be baked to use on the sides of the cake. Set pans aside and begin cake. Pre heat Oven to 350 degrees. Pumpkin Cake: In your mixer beat sugar and butter for about 5 minutes until light and fluffy, scrapping down the bowl frequently . Add In Pumpkin and all the rest of the ingredients, except the eggs. Mix just until blended. Add in the Eggs, one at a time just until blended. Divide batter equally into your 4 prepared cake pans, smooth it out and make it as even as possible in the pan. Place remaining crunch mixture in another cake pan or pie dish and allow to bake for the same amount of time as the cakes. Bake in a 350 degree oven for about 25-30 minutes or until a toothpick inserted in the center comes out clean. If you use 2 racks to bake on in the oven, at the halfway mark rotate the pans . Allow pans to cool about 10 minutes, then turn them out onto a wire racks and allow to completely cool. break up the extra crunch mix to very small bits to use to decorate the cake with. while your cakes are baking prepare a Cream Cheese Frosting. Cream Cheese Frosting Whip the cream cheese, and butter till very smooth and creamy Slowly add in the 10x sugar while mixer is on low setting Add in Vanilla and mix well. Set aside till needed. Assembly After your cake is completely cooled ( you can even refrigerate for a few hours) begin frosting the layers and putting the cake together. When you have assembled all the layers with some frosting between them, start to spread the remaining frosting on the sides and top. Good morning!!! OH MY CINNAMON ROLLS! So so excited to finally enjoy cinnamon rolls that taste AMAZING and are shockingly #glutenfree, Vegan, yeast free and are taste tester approved. Seriously I haven't had a cinnamon roll in 5+ years - and these are the BOMB! Teriyaki Tofu Veggie Stir Fry RECIPE: In a wok or large skillet turn to medium high heat, add 1 tbsp oil, chopped veggies (onion, broccoli, bell peppers, mushrooms), soy sauce, black pepper, and cook until begin to crisp and almost tender (not mushy). Add minced garlic (or powder), freshly grated ginger (or ground ginger), and marinaded tofu (pressed tofu, soy sauce, teriyaki glaze) and cook for a few minutes - do not burn the garlic! Glazed baked brussel sprouts 💚 Confession: I used to hate brussel sprouts, among several other vegetables, until I discovered how EASY it was to make them flavorful, addicting, and at home for LESS! Don't give up on veggies🌱There's an easy recipe that will make you go YUM and thank yourself for. RECIPE: Slice in half, toss in balsamic vinegar (optional: add soy sauce and maple syrup), oil, pepper. Bake on 400F, turn after 15 minutes, bake for 15 more or until crispy. (Optional) toss in a gluten free Teriyaki or favorite glaze/sauce. Enjoy warm as a side or in a salad 😜🍴Video recipe coming soon 😉👍

5 Ingredient Recipe: 1/3 cup #glutenfree rolled oats, 1/3 cup unsweetened vanilla #dairyfree almond milk, 1/3 cup #organic pumpkin purée, pumpkin spice and vanilla stevia extract. Mix in a small container (mason jar), seal, place in fridge overnight, and enjoy! I also added a dollop of coconut whipped topping (I used my maple apple dip) and date almond crumble topping (leftover my maple butternut squash recipe) on top!
