As you can imagine, with Africa being vast as it is, we are really just getting our feet wet with this month’s recipes, but I’ve tried to come up with two separate balanced menus, and choose solid recipes that appeal to a wide range of palates, for you to cook from. Both meals are totally adaptable to make with or without meat. Janice Mansfield1,108,386Join me for a live Hangout as we walk through the basics of making an easy gluten-free chocolate cakelet and a dairy-free ganache that you can use to glaze OR frost your cupcakes with.  Without the dairy, you'll find you have a delicious, intensely chocolate flavour that will know your socks off!   We'll talk about a couple of options for presentation so you can wow the one you love this Valentine's Day! Please follow the following link to confirm the Demo time in your timezone http://goo.gl/vuvVs #ValentinesHOA RECIPE: for Valentines Cakelets (scales up for more) - makes 12 cakelets in a standard muffin tin Adapted from Elizabeth Barbone recipe for Serious Eats. Preheat oven to 350 degrees 1 c granulated sugar (brown sugar also works well in this recipe) 1/2 cup brown rice flour 1/4 cup cornstarch 2 T sweet rice flour 1/2 cup cocoa powder 3/4 tsp baking soda 3/4 tsp baking powder (I use double acting) 1/2 tsp salt 1/2 tsp xantham gum whisk all dry ingredients together in a large bowl, then add wet ingredients 1 egg, lightly beaten 1/2 cup non-dairy milk (use anything except coconut milk -- it will change the texture of your cakes) 1/4 cup vegetable oil 1 1/2 tsp vanilla extract 1/2 cup hot coffee Portion into a standard muffin tin, filling each well no more than 1/2 full.  Bake at 350 degrees for 15-18 minutes. Remove from oven and let cool completely before icing. Ganache: Place 1 package Enjoy Life chocolate chips (283 grams) in a medium bowl.  Heat 200 grams coconut milk (1/2 tin) to a boil, either in the microwave or on the stovetop.  When just boiling, pour over the chocolate chips, cover and let stand for 10 minutes.  After 10 minutes, whisk the ganache together until it is smooth and glossy.  Let cool at room temperature for about 15-30 minutes if you are going to use it as a glaze. OR for 60-90 minutes if you are going to whip it and use as a frosting. Chef Dennis Littley959,297Join me as we learn to make Cannoli's!  I might even have a few extra tips on how to make them even more festive, so you better not miss my #Holidayhangout  ! Cannoli Cream 1 cup marscapone 1 cup ricotta cheese 1/3 cup super fine sugar 1 tbsp lime zest (lemon or orange is ok) 1 tsp pure vanilla extract 1/2  cup bitter sweet chocolate (chopped into small bits, or use mini chocolate chips) 12 large cannoli shells 1.  Drain ricotta very very well, it must be extremely dry, if possible make your own ricotta.  2.  Mix ricotta and mascarpone together until blended, do not overmix 3.  Add in superfine sugar, lime zest, vanilla, and mix until blended. 4.  Add in chocolate and stir to blend 5.  Place cream mixture into refrigerator until ready to use 6.  Place cannoli cream into pastry bag (or ziplock bag with end snipped off) and pipe into cannoli shells. The secret to keeping your cannoli filling thick and not having it get watery is using  Superfine Sugar,  Most recipes will call for confectioners sugar, but an old Italian Grandmother told me her secret, and it works!  If you can’t find Superfine (aka Bar Sugar) you can always pulse your regular sugar in your food processor for a bit, just don’t pulse too much or you’ll end up with 10x. #Holidayhangout   #holidayhangout   #italianpastry  Holiday Hangout - Let's Make Cannoli's2012-12-21 00:00:0034

One of today's cakes: a birthday cake for an 8 year old girl. Chocolate layers separated with milk chocolate buttercream, whipped cream on the outside. I just got my order of Russian piping tips so this was a great project to play around with them.

(I don't like using a lot of artificial colours for icing ... +Jaga Silk​ matcha gives you a lovely shade of green for leaves! ... About 1/2 tsp for 1 1/2 cups buttercream)

Protip: if you are using whipped cream for icing your cake, beat it by hand (with a balloon whisk). You'll find its much more stable, less prone to weeping. Only takes 5 minutes, tops.

Y'all may be calling it #bonebroth but its still #chickensoup to me.

Jeffrey has been afflicted with whatever icky bug is making its way around town, so I made up a batch of bone broth with some backs, necks and feet (70 mins in the pressure cooker with a bit of apple cider vinegar pulls out all the good stuff and leaves you with a lovely broth that is gelatinous when chilled). Its great on its own, or makes a lovely soup base with some aromatics and a piece of kombu.

The sun is out again!

The steroids seem to be easing the pain for Eric, such that he's able to get around without too much bother. The swelling in his shoulder has gone down, but has travelled down his leg to his left paw - seems to be abating somewhat as of this morning. This is day 3 of the medications.

He did try and take off down the cul de sac yesterday! I had him in the front yard for a pee, and I think he figured he should be going for a walk, as per usual.

I'm taking Kimi out for a long walk down Glendale train in about 30 mins as she's feeling a little left out of things (#shibadrama)

Update on Eric

We got the results back from his blood tests and they confirm the mast cells are systemic, which is not good. We can't know the full extent to which they've degranularized without a lot more invasive testing (which we don't plan to do as it would only stress him out, require sedation, and really not tell us anything that could "cure" him). The blood test combined with xrays is enough to confirm that this what is affecting his shoulder and causing the pain. Update on Eric

We got the results back from his blood tests and they confirm the mast cells are systemic, which is not good. We can't know the full extent to which they've degranularized without a lot more invasive testing (which we don't plan to do as it would only stress him out, require sedation, and really not tell us anything that could "cure" him). The blood test combined with xrays is enough to confirm that this what is affecting his shoulder and causing the pain. We also knew the last 2 surgeries he had to remove lumps meant there was a strong likelihood it would recur in some form, even though the excisions showed clear margins.

We're continuing on a course of cortical steroids as the initial shot did seem to help with his mobility and level of comfort. He's still a bit unsteady, but is able to walk around and negotiate his way up steps, onto the couch etc, and is eating and drinking. We'll know more in the next week whether he's responding well to the steroids or not as a means of managing this.

Eric says thanks for all the well wishes - he's feeling kind of tired but glad to be home on his own couch.

He took a fairly rapid turn for the worse starting yesterday evening, when we noticed him having problems with his left foreleg, and real difficulty getting comfortable - more pronounced this morning, with him having difficulty lifting his one front leg and screaming when we touched in his shoulder area. we thought it might possibly be a stroke, or a dislocated shoulder, or something related to the 2 mast cell tumors he's had removed.

Xrays revealed a large swelling in his shoulder area - no problems of any kind with the bone, and the first set of blood test results shows hes quite anemic, so there's a good likelihood the mast cell tumor is back/has spread internally and is causing the swelling. Lazy Saturday night dinner of carnitas with blood orange sauce and a quickie slaw, on a #glutenfree flatbread.

No real recipe for the carnitas. I use pork shoulder. Well salted and spiced with cumin, coriander and smoked paprika and slow cooked, covered about 2 hrs (or longer if needed) at 300f until starting to soften. Uncover the last hour to get some crispy edges.

The other day, someone was making an intriguing looking recipe for a sugar-free turmeric muffin from greenkitchenstories.com and I figured I would give it a whirl sans bananas, and vegan. I ended up using aquafaba "super-eggs" in these, along with some silken tofu. the texture is lovely and moist even a day later out on the counter. The full recipe makes about 15-16 muffins, but easily halves.

Aquafaba is the liquid from cooked chickpeas - most easily obtained by draining tinned chickpeas.

- 2T potato starch

combine wet ingredients in food processor
- 3 T ground flax mixed with 9T aquafaba (let stand 15 minutes)
- 2/3 c coconut yogurt
- 1/3 c olive oil
- 12 oz (1 block) silken tofu
- 1 c pitted dates

combine wet and dry ingredients
fold in 1 1/2 c blueberries

portion into muffin tins. top with additional blueberries
bake at 400F for 20-22 minutes

Making buttercream ... you just need to remember 1:2:3

1 part egg white, 2 parts sugar and 3 parts butter - works for either Swiss buttercream or Italian buttercream (today's frosting).

For italian buttercream, you need to convert the sugar to a syrup, cooked to 240F and then slowly drizzled into the mixer with the egg whites beaten to soft peaks. (start beating your whites when the syrup hits about 200F). I like to add a bit of water to the sugar, just to dissolve the sugar fully - don't worry, it will cook off as the syrup heats up.

Once you have added all the syrup, keep beating the meringue until it holds stiff peaks (see the meringue on the beater?) and is completely cooled.  If you are adding extracts, add them now.  Adding flavourings or anything with oils? add them after you add the butter.

Turn the mixer to medium speed, and then add your butteri... more »

I'm making #vegan  enchiladas later this afternoon for a client, and I'll probably make a few tacos for #tacotuesday  for us, so we've got a wee stack of tortillas whipped up - I just did them on the griddle since the stovetop had the burners free.

Homemade tortillas 1) taste better than storebought and 2) are way bendier b/c they are fresh!, and 3) really don't take that long to make. 

I always have a bag of Maseca Masa Harina in the pantry - proportions are right on the bag 2c masa harina to 1.5 c water, pinch of salt if you want.  It takes a few minutes to knead, and for best results let it rest covered with a damp tea towel for about 30-60 minutes to fully hydrate.  You'll find it way easier to press them out with the tortilla press.  If you don't have one, you can roll them, or if you're really tricksy, you can shape them by hand!

Making cookies is harder than you think ... Strike that, making sweet cookie shaped discs of dough is easy, but making a really great cookie that causes peoples eyes to light up when they bite into one, is hard.

And making one that does all that, and is #glutenfree and #vegan (but makes you forget it is all those things!) Is fucking hard! But feels fantastic when you dial it in. Taste AND texture have to be on point.

A couple of things for a small catered lunch for today (#vegan and #glutenfree - also no onions or garlic ) :
- Turmeric roasted cauliflower with meyer lemon, green beans, celery and toasted almonds.
- quinoa bowl with wilted spinach, sweet potatoes and za'atar roasted zucchini and grape tomatoes, with a tahini - orange sauce.
- apple buckwheat muffins

Recipe for the cauliflower:
Toss 1 medium cauliflower head cut into florets, with 1 tsp salt, 1 tsp turmeric, 2 tsp shawarma seasoning and 2-3 T olive oil. Add in about 1 cup diced celery and 1 1/2 cups blanched green beans, 1 meyer lemon cut in small dice (skin and all), and 1 cup diced onion (optional),
Roast at 400F for 15 minutes, stir and roast another 15 minutes. Sprinkle the top with toasted almonds
