SHARED 3-EGG ARUGULA, TOMATO & PARM OMELETTE
Lunch was a 3 (jumbo) egg omelette filled with sauteed grape tomatoes and arugula with a little bit of garlic as well as a handful of parm shared between the two of us with the last of the rosemary asiago focaccia.
The omelette was as much veg as egg. Even if I'm crunched for time, I like to make sure we get our fresh produce in one way or another...
I used up the last of the arugula today, so we're slowly but surely getting through all the perishables before doing a minimal grocery run tomorrow to fill in with proteins and staple veg that I don't like to be without.
Another week of fridge cleanouts, and everything should be fresh again!

Every once in a while, I go on these deep frying binges where I will deep fry everything in sight for 3 days straight.
These light and crisp tricolor potato chips made with yam, sweet potato, and white rose potatoes are totally worth the effort. All the better sprinkled with a little bit of superfine ground salt (I just put my kosher salt into the coffee grinder and give it a good whiz until it looks like an illegal substance) and served with a bowl of vinegar for dipping on the side.
Of course a tall frosty just gilds the lily...

A few peeps requested this recipe last night, so !Voila! :)
Last night, we had shrimp, shrooms, and snow peas with which to make dinner, and The Man said he wanted something spicy, to which I mused aloud how I've noticed that people who tend to say, "Oh, that's spicy!" in response to eating something hot usually don't have a high tolerance for capsaicin heat.
To which The Man responded, "OK. Make something HOT."
So I did. :P

STRANGE GRUB - STIR-FRIED SAND FLEAS
Just read a post on chowhound.com that reminded me of that one time I took a bunch of these home from the beach and cooked 'em. :D
Though I am utterly humbled by things like Zimmern eating woodworms in the Philippines and Bourdain choking down poopy wildebeest poopchute in Namibia (I think it was wildebeest, anyway), I have always considered myself a fairly adventurous eater. I attribute a good deal of it to having been born in Korea and being introduced at an early age to a lot of food ideas and flavor profiles that most folks here in the US might consider challenging.
When I do eat things that make other people go ewww, it's out of sincere enjoyment or hope that I will find enjoyment, and not for sport or novelty. I won't eat things on a dare that I don't think have the potential to be delicious to me by... more »

HOW TO CUT CARROT MATCHSTICKS (JULIENNE)
What a couple of weeks it's been!
I'm never this late to start cooking for one of my own Cookalongs. But now that the house is well again and Izz is not so fussy, I can get started.
The first thing I'm making for my bun thit nuong (Vietnamese noodles with grilled pork) is the do chua, or sweet and sour carrot and radish pickles. Normally, you use daikon or similar long, white radish, but I had these red radishes on hand and I can tell you from experience they work just fine.
So at any rate, if you ever wondered how to julienne a vegetable (essentially cut matchsticks from them), this is how you do it.

Truth is, I never envisioned myself a Stay-at-Home-Mom. And contrary to how many of my #SAHM sistren here make it look, it is often a difficult and lonely kind of job, despite the many intrinsic rewards.
Truth also is that I might not be one today, or perhaps at least I'd be much more reluctantly so, were it not for the camaraderie, support, encouragement, friendship, conversation, and creative outlet I have here, because of you.
And that makes doing what I do all the more fulfilling, rewarding, and, truthfully, easier.

MAKING #PHO BROTH...
I have a surplus of various unflavored stocks in the fridge, so I'm going to make some pho broth for this weekend.
Making pho broth isn't difficult, just a little time consuming is all.
Right now, I'm roasting my aromatics - onion, ginger and garlic first for about 40 minutes in a 450F oven, then I add the spices - cinnamon, star anise (and sometimes also a little peppercorn and clove), for the last 5 minutes.
Then they simmer in the stock with some fish sauce, salt and sugar until it tastes the way I want it.
And that, for the most part, is all that goes into pho broth.

QUICK & EASY BIGASS SALAD
in our individual bigass salad bowls was tonight's dinner.
Some arugula and lettuce mix, roast chicken breast, Fuji apple for a sweet crunch, red bell pepper, a little bit of thinly sliced onion, avocado, and Feta cheese.
The dressing? A quick vinaigrette made of 1/3 olive oil and 2/3 of the pickle juice left over from last weekend's pickled jalapeños.
Sometimes a fat salad really hits the spot.

BRUNCH
I have a confession to make - I don't LOVE dim sum. And if someone were to tell me that dim sum was going to disappear from the face of Earth tomorrow, I would probably say, "Welp, at least I still get my sushi!!! :D"
Dim sum is something I'm satisfied to do once a year for the experience of it. It's kind of fun to sit stationery at your table while little mobile hawker stalls full of ready to eat nibbles roll by so you can take your pick. But for me, the repetition of concepts, textures, and flavor profiles begins to wear thin pretty quickly, and when I'm done with my meal, I'm ready to wait another year for my next dim sum experience.
Today, we went to a place called China Palace in Irvine, which admittedly is an only slightly better than average dim sum place. But I can say that I've been to dim sum places with far better... more »

ROAST WHOLE CHICKEN BREAST

I do this almost every week, and it never fails to make me smile when I open that oven and see moist, juicy chicken breast with perfectly browned and crisped skin waiting for me.

TEA & SOY SAUCE BRAISED CHICKEN
Chicken braised with tea and soy, skin crisped under the broiler right at the end. Served with stir-fried green beans and bok choy in garlic oyster sauce, and steamed jasmine rice.
The chicken and the green beans - very kid friendly. The bok choy, my kids will pass on. :)
