Reed practices a flamboyant self-invented style, characterized by percussive techniques and simultaneous rhythm and melody lines that dance and ricochet around each other, giving his music a level of excitement that is unparalleled among today's guitarists. Playing an array of guitars from acoustic to electric to classical Reed's vast range of explosively original music will forever change your expectation of a guitarist. First-time listeners find it impossible to believe that they're hearing just the one musician, in real time. Reed attacks the entire instrument in a never-ending search for the orchestra he knows is lurking inside. At full tilt, his fingers, thumbs, fists and hands at once suggest a drummer, keyboardist, bassist and several guitarists at work. The most impressive thing about Reed's technique, though, is that it doesn't draw attention to itself. His compositions are far from abstract virtuosic displays; even without lyrics he creates vivid, engrossing scenes. Sometimes the effect is almost onomatopoetic. Reed generates visual stimuli with every tweak of his instrument, thus augmenting his wordless compositions with an aura of the poetic. Each tune is a story in itself with a potent, cinematic atmosphere and an almost tangible thread of communication between Preston Reed and the listener. Reed's entry into this guitar odyssey was inauspicious enough, his path thereafter largely self-discovered. A few chords learned from his guitar playing father, a brief, very brief, flirtation with the ukulele, clandestine practice sessions of his favourite Beatles and Stones songs on dad's guitar .... and then a too-strict classical guitar teacher led to premature retirement. At 16, however, Reed heard Jefferson Airplane's rootsy blues offshoot, Hot Tuna. His interest was rekindled big time. Acoustic guitar heroes John Fahey and Leo Kottke were studied, their styles absorbed but not imitated, and at this point things really begin to get interesting because, at 17, Reed, by now precociously proficient, played his first live gig, supporting beat poet Allen Ginsberg at the Smithsonian Institute. Just getting on a train from his native Armonk in New York State to Washington was a cool adventure. And it was just the first of many, not least of which was the one which resulted from his signing his first deal with a major record company, MCA, through the auspices of his friend, country singer-songwriter Lyle Lovett. Determined to make the most of this opportunity, Reed pushed himself to go beyond the standard fingerpicking styles he'd perfected. Raspberry Tequila Swirl Cake

All tarted up....

The raspberry icing, raspberry jam, icing sugar and cream (if I had finished this at home, I'd have used tequila for a real kick).

Fresh raspberries, a dusting of icing sugar, quite different from how I decorated the slice of this cake.

There was a Valentine's celebration at work, this was for the clients. One of the volunteers was kind enough to bring in a couple of other desserts. When asked which they like best, a client picked my dessert, I couldn't stop grinning.

Triple Chocolate Cake

Ganache

My most successful application of ganache to date!! Practice makes knowledgeable!

I like the ratio of chocolate to cream, perhaps I just have to make the ganache a little hotter when I'm applying. I will also have to look into the bubbles in the ganache and what causes them.

But SHINY!!!!

Moroccan Roasted Chicken & Eggplant

Sweet Bell Pepper, Onions, Cress, Preserved Lemon/Garlic Scape Gremolata

Busy putting together shelving and rearranging rooms. A one pan does it all meal is perfect, also perfect after working all day.

425F Oven, chicken drums, eggplant, red bell peppers, sweet onion, Ras El Hanout, Olive oil, salt and pepper. Toss, on a sheet pan, roast for 35 minutes, check, stir, roast another 20, done.

A riff on gremolata, kind of the same ingredients, with a twist. The cress because I adore cress. On that note, I believe I may have found a source for wild spring cress, fingers crossed!!!

The weather change (coldish again) has brought with it much discomfort which keeps my energy levels low. Still accomplishing, just not as fast as I'd like (read frustrating). Oh well, roll with it.

I splurged on five figs on Saturday, such a treat. Simply done, roasted 400F with fresh thyme/olive oil for 15 minutes.

Cinnamon Butter Crumb Blueberry Muffins

Getting back on the cooking wagon after a couple of days relax. No dinner from yesterday as I was too full after the Dim Sum Brunch.

Looking through the freezer (produce from last year) and realizing it's time to start using up goodies from the last harvest. Here's a start, a very good start if I do say so.

Much to be accomplished today, Family Day here in Alberta. First day at home after having a busy weekend going here and there.

Fiery Ethiopian Wings

Wrinkled Cress, Preserved Meyer Lemon

The Ethiopian Berbere paste was calling to me. That and a hell of a deal on organic wings at the market (unexpected). 6 meals of wings, for $25, about $4.00 a meal, win and win!!!

Oven temp 425F, two heaping spoonfuls of the paste and a generous glug or two of olive oil. 40 minutes later, yummers!!!

Some finely diced preserved Meyer lemon for zing and saltiness. Talk about an easy, delicious, finger licking, satisfying meal.

The wrinkled cress was new, grow at the greenhouse in Morninville. They have had (once) water cress but after a conversation with the growers, I guess the difficulty in getting it to grow in a greenhouse environment led them to offer an alternative. A friend is coming over for coffee, asked if there was anything to bring, I said no. I have this covered.

It also gave me the chance to try some of the ball tips I have for icing. Sure as hell not as easy to use as I thought, will take more practice. Was fun though!

Citrus Thyme Bake Berkshire Pork Chops

Roasted Fennel, Kumquats, Red Cipollin Onions, Arugula

Some of my favourite meals lately, turn the oven on hot (400F +), toss everything with olive oil, salt & pepper and a herb/spice. Roast for 30 - 60 minutes and done!

Citrus Thyme Bake Berkshire Pork Chops

Roasted Fennel, Kumquats, Red Cipollin Onions, Arugula

Some of my favourite meals lately, turn the oven on hot (400F +), toss everything with olive oil, salt & pepper and a herb/spice. Roast for 30 - 60 minutes and done!

Quick, easy clean up and delicious.

Raspberry Tequila Swirl Cake

All tarted up....

The raspberry icing, raspberry jam, icing sugar and cream (if I had finished this at home, I'd have used tequila for a real kick).

Fresh raspberries, a dusting of icing sugar, quite different from how I decorated the slice of this cake.

There was a Valentine's celebration at work, this was for the clients. One of the volunteers was kind enough to bring in a couple of other desserts. When asked which they like best, a client picked my dessert, I couldn't stop grinning.

Homemade Evoo Aioli, Pea Shoots

Bravas sauce from the freezer (if I could wish everyone a freezer I would), potatoes from the market, roasted, 425F oven, 30 minutes (tossed with olive oil, s&p).

I somehow managed to slip while making the aioli, imagine green goo flung across your kitchen counter, you, wall, toaster. If you're going to do something, put your whole heart into it! Hahahahahha! Spent 30 minutes cleaning up that mess.

Oh well, dinner was quick. I'll have to own the fact that I'm loving having a microwave again. Even if it's just mainly to thaw and heat.

Sage Butternut Roasted Chicken Kale Salad

Preserved Lemon, Sweet Aji Chili Pepitas

I've been busy dealing with a multiple of things, I hate things. I didn't hate this, super delicious, all one pan, roasted in the oven.

While I dealt with things, the butternut squash, sage, chicken and garlic, roasted it's little heart out in the oven.

I did make the Aji chili pepitas, butter, sugar, Aji Amarillo chili powder using the technique for spicing up seeds/nuts. I now have extras to use on other dishes.

Preserved lemons are a staple for me, always have some in the fridge, backups in the freezer.

Yesterday, after work, stupid elevator. Eventually (after phone calls to make management aware) I figured out that if I gently pulled the wire, the outside door would open.

I was also told I shouldn't do that, tough, I'm not staying in the dam elevator until the elevator company arrives if I don't have to.

Especially when I asked for a time frame and was told they didn't know. Yes, turning it on and off again didn't work.

It's nippy out, pure comfort food. A full bottle of red wine (go big or go home), cipollini onions from the market (see, good year for onions), sweet carrots, baby bella's.

All the braising liquid, reduced, added chicken stock, reduced again, a little bit of cream, reduce. Silky, delicious, red wine cream gravy.

And leftovers!!!!

Ooookay, the dip didn't quite work out the way it did in my head. Not horrible but not as delicious as I would have liked. Will have to revisit it with some changes.

Now, the crispy, sweet onion rings, spot on!!! Sweet onions from the farmers market, a conversation with the grower about what a great year it was for onions. I love learning these things, each season has a crop or two that do amazingly well.

Good ole, seasoned flour, egg, panko crumbs, dip, dip, dip. I have to admit once you use panko crumbs, it kind of ruins regular bread crumbs for you, why? The crunch, you can't beat it, imho.

Oh, this was Saturday's dinner.

Chorizo Sausage, Helda Beans, Orange/Red Tomatoes, Onions, Lebanese Flatbread

So originally this was supposed to lean towards a spicy Mexican style of dish. Took a left turn and morphed into a more Middle Eastern style of stew.

Used up the last of the beans, some little tomatoes I had from the market. Speaking of the tomatoes, they are wonderful for cooking with, meaty, they hold their shape yet get super hot all the way through. I'm going to play with them a little more, some ideas floating around in my head. I mixed in some of the berbere paste I made the other week and a few tablespoons of yogurt. Made a deliciously creamy, spicy sauce.

After a dentist appointment on Friday, I popped into Sunbake Pita (was close), getting some of their fabulous pita and flatbread.

My most successful application of ganache to date!! Practice makes knowledgeable!

I like the ratio of chocolate to cream, perhaps I just have to make the ganache a little hotter when I'm applying. I will also have to look into the bubbles in the ganache and what causes them.

I think I'm going to have to ask what kind of green beans these are. I thought they were broad beans but upon googling, nope. A local greenhouse grows them, super delicious, crunchy green goodness.

A second Berkshire pork chop from the package (they come in twos). After cake baking, I went quick and lazy. Fried pork chop, sauteed onions/garlic/green beans. Heated green onion cake in the pan, done.

I'm so picking up more of those green onion cakes at the farmers market. Some will be headed to the freezer, I'll share some with the boy child.

Pork chop seared with Aleppo chili, seared oyster mushrooms. After all the searing was done, some shallots added to the pan, sauteed, white wine to deglaze, a little heavy cream, voila pan sauce.

Pan sauce made a great dressing for the baby kale (which can stand up to a little heat).

Yummy, quick and delicious!

Candied Orange Peel

Citrus season is happening, best time of year to make this. I can see soooooo many uses. The trick, remembering that I have them in the fridge!!!

Breakfast for Dinner

Green Onion Cake (I did not make, bought at the farmers market), Seared Caramelized Cabbage & Onions, Fried Egg, Homemade Chili/Garlic Paste

I originally had something else in mind for dinner, this was much easier. Lazy Sunday's!

I have no where the skills, these green onion cakes are amazing! Sometimes you pick and choose what you learn to make (yes I made green onion cakes once, these are way, way better).
