Jo Mills3,998Did you not mark your calendars? Shame, shame. Last year +Scott Cramer dared me to sit under my desk at work and share a picture; I did, he reshared and viral chaos ensued ;P It was so much fun that we decided to make it an annual event, so get under your desk (or kitchen table or coffee table), take a pic and post it on G+ with the ridiculously long hashtag #InternationalTakeAPictureUnderYourDeskDay ! And, mind your noggin. Last year some companies even got their whole office involved; along with kids and pets - sitting under your desk is for everyone ;P It's Friday. Allow me to introduce you to my first guest, he’s *15 year old David Garcia*, a native of Mountain View, California, the epicenter of Silicon Valley.  While some youths at this age are glued to the TV, David’s not.  His passion for cooking began at the tender age of three.   Every time his grandmother cared for him, she cooked eggs and David wanted to learn how to make them.   Baking for David is a way to relax, have fun and learn new things.  He loves the saying “Give a man a fish, feed him for a day.  Teach him how to fish, feed him for a lifetime.”  After high school, David plans to attend college and major in philosophy and minor in music, and then to continue mastering his cooking skills with a culinary degree.  This young man is awesome!! So join us on Saturday 26th, at *4:00PM(EDT), 1:00PM(PDT)  & 2:00PM(CDT)* to hear David’s story and watch him make one of his favorite desserts, Julia Child's Reine De Saba(Queen of Sheba) Cake - http://goo.gl/W9yGDT   I do encourage audience participation so please feel free to ask David or myself any questions via the Hangout's Q&A App.Food Stories - featuring David Garcia2013-10-26 22:00:0029

beatstone2,118,214+Artists In The Plus is proud to bring you a very special "Concerts In The Plus!' with Guitar Legend +Preston Reed. (Banner Photo By +Ralf Hebauf ) +Preston Reed has virtually reinvented how the acoustic guitar is played. Reed practices a flamboyant self-invented style, characterized by percussive techniques and simultaneous rhythm and melody lines that dance and ricochet around each other, giving his music a level of excitement that is unparalleled among today's guitarists. Playing an array of guitars from acoustic to electric to classical Reed's vast range of explosively original music will forever change your expectation of a guitarist. First-time listeners find it impossible to believe that they're hearing just the one musician, in real time. Reed attacks the entire instrument in a never-ending search for the orchestra he knows is lurking inside. At full tilt, his fingers, thumbs, fists and hands at once suggest a drummer, keyboardist, bassist and several guitarists at work. The most impressive thing about Reed's technique, though, is that it doesn't draw attention to itself. His compositions are far from abstract virtuosic displays; even without lyrics he creates vivid, engrossing scenes. Sometimes the effect is almost onomatopoetic. Reed generates visual stimuli with every tweak of his instrument, thus augmenting his wordless compositions with an aura of the poetic. Each tune is a story in itself with a potent, cinematic atmosphere and an almost tangible thread of communication between Preston Reed and the listener. Reed's entry into this guitar odyssey was inauspicious enough, his path thereafter largely self-discovered. A few chords learned from his guitar playing father, a brief, very brief, flirtation with the ukulele, clandestine practice sessions of his favourite Beatles and Stones songs on dad's guitar .... and then a too-strict classical guitar teacher led to premature retirement. At 16, however, Reed heard Jefferson Airplane's rootsy blues offshoot, Hot Tuna. His interest was rekindled big time. Acoustic guitar heroes John Fahey and Leo Kottke were studied, their styles absorbed but not imitated, and at this point things really begin to get interesting because, at 17, Reed, by now precociously proficient, played his first live gig, supporting beat poet Allen Ginsberg at the Smithsonian Institute. Just getting on a train from his native Armonk in New York State to Washington was a cool adventure. And it was just the first of many, not least of which was the one which resulted from his signing his first deal with a major record company, MCA, through the auspices of his friend, country singer-songwriter Lyle Lovett. Determined to make the most of this opportunity, Reed pushed himself to go beyond the standard fingerpicking styles he'd perfected. The result was the beginnings of Reeds startlingly innovative style, with its percussive, two-handed fretboard attack, that you hear today and which has caused guitar luminaries such "Concerts In The Plus!" So get yourself ready with some interesting questions! Then, in the following three on-air hangout sessions, I will help you get some structure in place that will help motivate you to become a successful author.  _We will also have additional guests to the subsequent hangouts to get you focused and inspire your inner author!_ *Next Dates:* 20th January (same time) 17th Feb 17th March *Interesting in getting involved?* Click ‘YES’ on the event, read Guy’s book and I’ll see you at the launch! Want to know more about Guy and Shawn’s book check out this post on my blog: http://www.martinshervington.com/getting-books-published-with-ape-author-publisher-entrepreneur-self-publishing/Live hangout on-air with Guy Kawasaki! Sloppy Joe with Cheese

Lamb, Strawberry Ketchup, Bravas Sauce, Mozza

Okay, my ingredients are a little different than regular Sloppy Joe's. That's just what's in my freezer/fridge. Still the same idea as when my mom made these when I was a kid. Messy, super delicious.

The cheese, yes, mom used to add cheese as a treat. The bun, from Bon ton Bakery. I had stopped there on Saturday as The Italian Center was putting together their new cafe. I didn't want to wait around for a half hour to buy bread, Bon ton, I drive by there on my way home.

Comfort food, 100% all the way!!!!

Duck Breast with Cherries and Brandy

Roasted Asparagus

The last of the fresh asparagus this season. I have some tucked away in the form of frozen for soup and a nice batch of asparagus relish. Surprisingly, asparagus has an affinity with cherries.

Seared duck breast with a cherry sauce boasting brandy and green peppercorns. I can never use a full (even though they are smaller) can of green peppercorns. I freeze them in ice cube trays (about 1 tbsp each), I can then not waste and use them for other sauces. An extremely reduced chicken stock really punched the flavour of the sauce.

The recipe for the Cherry/Brandy sauce was from the cookbook: Duck Duck Goose by Hank Shaw. If you are a duck lover, absolutely fabulous book.

A Taste of Edmonton

I didn't cook these, I most certainly ate these!!!

Seriously, you need to go to this event twice perhaps three times, once, you just can't eat everything. This even with sharing 4 ways. Due to attending last year, we knew which items to stay completely away from. Others were welcomed back with squeals of glee!!!

I didn't get photo's of everything, too busy enjoying the food.

A list of the dishes, starting with the first photo and working through them:

1. Zinc Restaurant - Banana Bread Pudding w/ caramel sauce, whipped cream & Bruleed Banana - to die for!

2. Noorish - Heirloom Chocolate Dipped Frozen Banana Rolled in Almonds (on a stick) - delicious, refreshing, generous with the chocolate.

3. Pampa Brazilian Steakhouse - Garlic Rumpsteak w/ Chimichurri sauce on Focaccia - Chimichurri... more »

3. Pampa Brazilian Steakhouse - Garlic Rumpsteak w/ Chimichurri sauce on Focaccia - Chimichurri had a good kick, super tender steak.

4. Freson Bros. Kitchens - Ivan's Country German Sausage w/ Country Hearth Bread & Home Style Pickled Onions - spicy sausage, super flavourful, onions were a great contrast.

5. Moksha Indian Cuisine - Tandoor Chicken with Naan & Corriander Chutney - Excellent Tandoor chicken, the corriander chutney was nicely cooling.

6. Langano Skies Ethiopian Restaurant - Sambusa w/ Vegetables & Hot Sauce - An Ethiopian Samosa (the way it was described to me), excellent hot sauce that was a different kind of burn from the others we ate.

7. The Melting Pot - Cheese Fondue in a Bread Bowl - So good, stronger cheese flavour with a touch of wine, so delicious.

8. Koutouki It's All Greek To Me - Spanakopita with Tzatziki Dip - a little stingy with the spinach filling but a great Tzatziki. We had dolma at one of the trucks, packaged Tzatziki, you can really tell the difference.

9. The Lingnan Restaurant - Dry Spicy Chicken - Deep Fried Goodness with a great chili sauce - as you can see, consumption before remembering to take photo.

So

The didn't notice until there was a sheen on the water.....pipelines are safe, sure, sure they are.....

The line was moving heavy oil with a product called diluent, which helps the oil flow. The spill into the river was noticed as a sheen on the water Thursday morning. It entered the river about 30 kilometres east of Lloydminster.

According to the company, the total volume was "estimated at 200 to 250 cubic metres." A cubic metre is equivalent to 1,000 litres.

Mushroom Poutine

I had this craving, I satisfied it. Though a little planning was made in advance.

Cheese curds and potatoes from the Strathcona Farmers Market on Saturday. Gravy from beef stock in the fridge, everything else just random.

I have no idea why the craving for winter style food lately.

Kosher Dills

Overnight.

Yes, I had a pickle for breakfast, yes, overnight and delicious!!!

It was also my first time making pickling spice from scratch. I actually had to get on the tall step stool and get my mortar and pestle down to bash some whole spices. I'm impressed, this means I'll never be purchasing the premade pickling spice again, the difference, wow!!!

Dill from my mom's garden, I guess I'll have to make a jar up to take over as a thank you. More pickling cuc's will be acquired from the farmers market on Saturday. Love, love these pickles!

I'd love to have the room/time to ferment, not possible at the moment, perhaps later in the autumn.

Tiny Little Flavoursome Strawberries

Vanilla Whipped Cream

Seriously people, take the time (all of 5ish minutes) to whip your own cream. Use a hand mixer or whatever, freshly whipped cream puts the edible oil shit to shame. Raises your fresh fruit to a whole new level.

I'm not certain if there will be anymore local strawberries this year. I'll have to check with the B.C. people and see what their season is doing.

Basil Aioli, Berkshire Bacon, Patatas Bravas

In yesterday's warmth (yes I know it doesn't compare to other places), not feeling particularly inspired for making dinner. Suggestion from son - Patatas Bravas, inspired. Funny how I never have any issues making this dish. Pure comfort food that works in cold or hot weather.

Having a double batch of sauce in the freezer helps. The potatoes are first of the season, super thin skinned, sweet and delicious! A quick rinse, cut, olive oil, s&p, bake (450F for 20 - 30 minutes), soooo easy. Farmers market potatoes have completely spoiled me, no peeling, near the end of the winter you might have to trim a few spots, wash, cook. Cuts way down on prep time.

I went with a basil aioli this time instead of truffle, just to see how it worked. Worked fabulous!

Food for Thought

Quite amusing /s/ that what a number of people have been saying for quite some time is finally being proven and accepted by others. More of where there's a will there's a way.

Both Tunisia and Vietnam, for example, saw their forested area increase by approximately 60 percent between 1990 and 2015.

How these seven countries—the others are Chile, Costa Rica, the Gambia, Georgia, and Ghana—protected their forests while boosting agricultural production varied according to their social, political, and economic circumstances. But common themes emerge, some of which merit international attention. More coordinated land planning, for example, means a more holistic approach to coordinating different land uses, while improved land rights gives local citizens an incentive for better stewardship.

Garlicy Beef Burger

Aged Gouda, Ruby Plum Mostarda, Pickled Onions, Romaine

Quality control testing that Ruby Plum Mostarda.

Aged gouda doesn't melt the best, there was just a little bit of gouda left, best to use it up before it can't be used. Easy dinner, delicious dinner.

Pickled jalapenos and onions in the fridge.

It's supposed to be hot today 24C (hey it's Canada!!!). I have more pickling to make happen, I'll see how energetic I am for making dinner.

I need a second fridge to keep pickles/preserves in....

And two more shelving units for recipes/cookbooks.....

Sunday Food

Double Bacon Pasta with Basil, Bell Peppers and Tomatoes

Grilled Cheese - Aged Cheddar Sandwich with Golden Plum Mostarda

Ruby Cardamom Plum Jam

I need Monday to have a rest!! It was a busy kitchen day yesterday, productive one also.

I kept dinner fairly simple, Berkshire bacon, prosciutto, seared cherry tomatoes (glut thing happened again), bell peppers (accidentally grabbed another bag from the bargain bin, too many in the fridge). A little Pecorino Romano dusted on top, lurves that stinky cheese.

I wanted to see how the mostarda worked out, it pairs beautifully with cheeses and meats so I went the cheese route. It's good but I'd like more kick, figuring ways out to add a little more mustard bite.

The Ruby plum jam is amazing, spot on with this one. Supposedly these are more eating plums than conserves, just used a slightly different technique to make them work. I adore the colours of both the jam and mostarda.

Korean Style Baked Chicken

Hot Sauce Glaze, Sesame Soy Garlic Glaze

I happened to have the oven on last night (cooking/roasting other things) and this happened.

I had really wanted to make a more traditional style of Korean Fried Chicken but I couldn't find any Soju at the liquor store. I was reading that Soju is essential to the crisp texture of KFC as the soju somehow works to keep the gluten either up or down in the batter. Also I had 4 items on the go, cleaning up the mess that frying can make just wasn't in the plans.

So, I roasted the chicken, made the glazes and tossed the hot from the oven chicken into the glazes. Delicious, yes minus that wonderful fried chicken crunch. Oh well, soon (as I find the dam soju).

Plums

Gold & Ruby

Plum Mostarda

Plum season just hit, the very beginning. These are super sweet, juicy, run down your chin kinda juicy!!!

Preserving has begun, hard core and a little different from last year. Last year was a rebuilding year, the freezer had been lacking local, seasonal fruits and dam this tastes good veg, that's been taken care of. I can now have more fun making more interesting combinations for the coming year.

Turns out the Rajah cherries only had a two week run this year. C'est la vie!

I'm still not water canning, as long as electricity exists and I have a freezer, that is how it shall happen!!!

Today will see plum (ruby) jam, depending on energy levels and time, possibly more.

Savoury Duck Burger

Roasted Duck Breast, Strawberry Ketchup, Melted Mozza, Balsamic Onion Jam

Friday's dinner was lacking much in the way of greenery. Day before the market and it happens.

Still delicious if lacking the wonderful crunch of a good lettuce (would have made just about perfect). Greens acquired at the market.

Italian Center South Side

Chocolate Ice Cream for breakfast, uhm, hell yes!!!!

The first weekend the new cafe at the Italian Center was open. It's absolutely beautiful, the floors were imported from Italy. No idea where the light fixtures are from but they are gorgeous.

Two kinds of chocolate ice cream for breakfast while waiting for the grocery area to open. This was after the market, before heading to my sisters place for a visit with my niece on her birthday.

I'm supposed to Hirl with a couple of Edmonton people for coffee here, still have to arrange for this to happen!

Strathcona Farmers Market

Beets, Beans and Greens

Preserving is in full swing. I can only do so much in a given week so....

Some of these are for next week, I always ask how the crop is looking and how much longer they think they'll be harvesting. Good to know what you can delay for a week or paycheck for and what needs to be acquired now.

Brandied Cherries with Red Wine

Not water bath processed, so into the fridge with these babies. More cherries will be acquired at the Farmers Market tomorrow, I just might have to try this method with another variety of cherry. These are the Rajah's.

Timer to make some dinner.

Roasted Duck & Beet Salad

Roasted Beets in a Black Garlic/Balsamic Vinaigrette, Mustard Greens, Soba Noodles, Onion Jam, Feta

The roasted duck is from The Barbecue House, 9711 118 Ave NW, Edmonton, AB, the rest is from me and the Farmers Market. Spoiling myself every once and awhile is fun.

My son wasn't crazy about the combination, though he didn't have it with the mustard greens, he's not a fan of greens. Personally, the mustard greens balanced everything, the right note of sharpness/bitterness to counter the sweetness of the beets and the richness of the duck.

And I still have two roasted duck breasts for tonight's meal, not a clue where I'll be going with them.

My nieces birthday is on Saturday, I asked my sister what was needed as Grace is little enough she'll more than like just play with the boxes. Clothing in larger sizes was requested.

Did I have fun, yes. Do I wish there was more choice, variety, dam near everything is pink, yes. Oh well, I'll just have to plan better next year. Still cute.

This!!!

The power of food.

However, LA Kitchen isn’t just another radical food-operated charity, especially if you consider who else is involved: High-profile chef José Andrés is the board’s co-chair, and successful food entrepreneur Erik Oberholtzer of Tender Greens is a board member.

The company is perfectly summarized by Egger: “Too often, charity is about the redemption of the giver, not the liberation of the receiver.”

Williams is one of these receivers, to say the least.

Bad Ass

Ahmed, who has lived in New Zealand for 20 years, told the Guardian, “The man wanted to frighten me and I decided he couldn’t do that.” Instead, he kept preparing a large chicken souvlaki for a waiting customer. Then, he says, “I passed the customer his food because I wanted him to leave the shop and not be in any danger.”

Next, Ahmed explains, “I turned my back on the robber and walked to the kitchen to call the police. I told myself, ‘If he shoots me at least my body will be further away, and the gunshot won’t be as serious as shooting me at close range in my heart or my head.’”

I didn't cook this, I did help with the recipe development.

The perks of food photography/recipe development for +AllDen Foods, I think it's really important to do this photography at home in the future (I'm not just saying this for the food, yep, right nods). Made for the most delicious dinner. I see why people are falling in love with this dish even when they don't think they like tofu!!!

Nice kick for flavour, not afraid to have some heat!

Rosemary Garlic Sausage

Marinated Candy Cane Beets, Mustard Greens, Feta

Monday's dinner. The first batch of beets is here at the farmers market, candy cane beets are just so much fun visually. Also extremely tasty, looking forward to playing with them more.

I really didn't know what I wanted to make last night (sometimes it works, others not so much). This was okay, not spectacular, still tasty. A mustard/apple cider vinaigrette dressed the beets and I left them to marinate for about an hour.

I've sourced another sausage making supplier here in Edmonton, some extremely delicious sausage to be had. I'll be checking them out very soon, hoping they are somewhat reasonable and delicious.

Triple Cherry Cake

Rajah, Bing, Lapin Cherries, Bourbon Vanilla Whipped Cream, With a Cherry on Top!!!

A simple sheet pan cake that I want to try with other fruit. As much as I adore cherry cheesecake, sometimes you want something a bit different. This is, is wonderful, quick to make.

I know the plated dessert photo is over exposed. When you're dealing with food (at least when I am), you get one chance to take the photo properly, after that, eaten!!!! Not running a huge advertising budget here. Ha!!!

Truffled Hangar Steak

Sauteed Garlic Spinach, Oyster Mushrooms, Malbec Pan Sauce

Pan seared Hangar Steak, finished with a pinch of truffle salt. The two go together beautifully. Sauteed oyster mushrooms, nothing fancy.

I got a tad excited at the farmers market with all the fresh produce and purchased spinach when I already had a bag in the fridge. Oh well, saute both bags, a little garlic, a little lemon juice, simple and super delicious!

I don't like wasting all that glorious flavour in the bottom of the pan, simple wine pan sauces are the way to make certain this doesn't happen. Added about a 1/2 - 3/4 cup of Malbec to the pan, reduced it by about a third. Added a pat of cold butter to finish, tasted, seasoned, done.

Eggplant Pasta

Bravas Sauce, Mature Pecorino

Batch making Bravas sauce, triple garlic, raw, roasted and black. I adore Bravas sauce, makes for super quick pizza sauce base, pasta sauce, as far as your imagination wants to take it.

Patatas Bravas happened last night but for some reason, my SD card skips from 5315 to 5329, annoying. Might as my son to see if he can find them or if it's a card issue.

If you're going to dirty the dishes, take the time, make a batch if it's something you use often, can or freeze. You won't pay for processed food at the store, you know what goes into your favourite/often used food and you can tweak/have fun with the flavour.

How It's Supposed To Be

It bothers me when people in Canada don't feel safe because of what's happening in another country. I've heard so many people try to say Canada is the same as the U.S., sorry but no it's not.

“We’ve just had too many people in big crashes this year so you’ve got to slow down,” the officer says in the video. “I just don’t want you to get hurt.”

It was the last thing Thomas expected to hear. He drove away with a speeding ticket in hand.

“I’m not even mad! I’ll pay it!” he said.

Of a sorts. Made using leftover Tri-tip steak, cippolini onions, Shiitake mushrooms, red wine, reduced beef stock (4 cups down to 1), carrots, fresh thyme and parsley.

The weather has been rainy off and on, not overly hot 20 - 24 C, an easy way to use up leftovers.

Comfort food has been super appealing lately.
