Reed practices a flamboyant self-invented style, characterized by percussive techniques and simultaneous rhythm and melody lines that dance and ricochet around each other, giving his music a level of excitement that is unparalleled among today's guitarists. Playing an array of guitars from acoustic to electric to classical Reed's vast range of explosively original music will forever change your expectation of a guitarist. First-time listeners find it impossible to believe that they're hearing just the one musician, in real time. Reed attacks the entire instrument in a never-ending search for the orchestra he knows is lurking inside. At full tilt, his fingers, thumbs, fists and hands at once suggest a drummer, keyboardist, bassist and several guitarists at work. The most impressive thing about Reed's technique, though, is that it doesn't draw attention to itself. His compositions are far from abstract virtuosic displays; even without lyrics he creates vivid, engrossing scenes. Sometimes the effect is almost onomatopoetic. Reed generates visual stimuli with every tweak of his instrument, thus augmenting his wordless compositions with an aura of the poetic. Each tune is a story in itself with a potent, cinematic atmosphere and an almost tangible thread of communication between Preston Reed and the listener. Reed's entry into this guitar odyssey was inauspicious enough, his path thereafter largely self-discovered. A few chords learned from his guitar playing father, a brief, very brief, flirtation with the ukulele, clandestine practice sessions of his favourite Beatles and Stones songs on dad's guitar .... and then a too-strict classical guitar teacher led to premature retirement. At 16, however, Reed heard Jefferson Airplane's rootsy blues offshoot, Hot Tuna. His interest was rekindled big time. Acoustic guitar heroes John Fahey and Leo Kottke were studied, their styles absorbed but not imitated, and at this point things really begin to get interesting because, at 17, Reed, by now precociously proficient, played his first live gig, supporting beat poet Allen Ginsberg at the Smithsonian Institute. Just getting on a train from his native Armonk in New York State to Washington was a cool adventure. And it was just the first of many, not least of which was the one which resulted from his signing his first deal with a major record company, MCA, through the auspices of his friend, country singer-songwriter Lyle Lovett. Determined to make the most of this opportunity, Reed pushed himself to go beyond the standard fingerpicking styles he'd perfected. My son's birthday cake, which he enjoyed immensely. Yes, I sent (after absconding with a slice) the rest of the cake home with him.

Worked out the details on the cream cheese icing, increased the icing sugar and decreased the whipping cream. A totally pipeable cream cheese icing.

Raisins where a must, I'd like to try soaking the raisins in alcohol first (next time), for a moister and more intense cake.

Roasted Eggplant Salad

Cumin Hummus, Ciabatta

It was 28C here yesterday. I'm a northern woman, TOO.DAM.HOT.

Made a wack of hummus, some headed to the freezer, some headed onto my plate.

The roasted eggplant was from another day, in the fridge saying: 'pick me, pick me'. Add some preserved lemon, a little finely diced bell pepper, dragon arugula underneath. Drizzle with EVOO, done.

It's not the end of the world that I didn't have pita bread. Would it have been more authentic, yes, does this still work, yes. Don't let anyone pigeon hole you into doing something their way, do it your own way.

Have I every said how much I adore hummus.....

All related to the kitchen, all edible. The rosemary and lavender will be brought inside come the fall. I was informed that the begonia is edible from the seller at the market (sweet)!

Trying to reign in the urge to get more plants (I'll see how successful I am). Though there is a very limited amount of space. I have only one plant that is inedible, the last photo, trailing style with pinky/purple flowers in the white bucket. I am a lazy ass so not running out to the balcony to give you the name of it!

Have to get my sugared flower making on this year (intentions).

Planting, caring, centers me.

Spruce tips are around again, for how long, no idea but I'm playing. The spruce tips bring a pine/citrus flavour which I'm beginning to understand better. Akin to mango - rosemary flavours. Still figuring it out.

Want to do a couple of desserts (if it happens). Working with the savoury. Have to be a little braver with the application of the spruce tips. Will happen, much fun.

First time playing with the Turkish Cemen paste that I made the other day. I'm intrigued with the flavour, looking forward to exploring more.

Whisked the Turkish Cemen paste with butter, tossed in the wings. Quick hot roast in the oven. Meanwhile once again, Cemen paste and butter, added Panko crumbs, tossed well, oven toasted. The crumbs were added after the wings where cooked. Crunch, more flavour was added to the wings. I'm going to have to refresh my memory on the use of crumbs in cooking.

The Dragon arugula was sharp and bitter, love, love, love!

Would make again....

So this happened, I was very, very happy that it did.

The eggplants from the OSFM this time of year are tiny and super delicious. Fish and eggplant are a match that go beautifully together. I know I tend to like my eggplant with a little more brown on them than most people, I'm okay with that.

I am going to have to make a run to the fish mongers soon. I'd like to hit them up on a Friday morning as that's when they have fresh fish. I'm curious as to what and where they are from.

This makes a more than acceptable dinner. I only have one container of homemade hummus in the freezer now, going to have to make another huge batch. For when it's too hot to cook or I just don't feel like doing so.

Probably because the pastes take food to a whole new level, they are quick to use (once made and in the fridge). I don't have any preconceived notions on how the pastes should be used. Which, to me, is great, I can step outside the box (probably lots of people have already done this).

Most importantly, it's fun to this. At least for me.

I know this is not everyone's cup of tea. Personally, OMG, so yummy!!!

After being pointed in the right direction by +Jenn Camforth, I decided to give the roasted radishes a go. A moment ago I just reread the recipe/technique and realized I didn't cut the radishes in half. Oh well, I have more, I will do this again. Still delish, I was craving a tang to go with the radishes, I think they might get drizzled with a little vinegar next time.

The chicken livers, oi!!! Sauteed, added roasted cumin, fresh rosemary and garlic. Finished with a compound date butter. This will be explored more as yesterday at the market yielded all sorts of goodies.

OSFM, plants were out in full force yesterday. Soooo hard to walk away without loading up on starter plants. That being said, I am already the owner of 3 varieties of thyme, marjoram, sage and another rosemary plant.

My space is much more limited this year, though I have a fabulous southern exposure on my balcony. So I'll definitely be geared towards plants that like to bake. Another consideration is wind.

Each night I'm thrilled to hear a chorus of frogs, which always means you've got a healthy environment happening. Should also mean skeeters will be chowed down on (fingers crossed).

I'd love another zucchini plant or three, tomatoes, I'm spoiled and have access to reasonably priced local tomatoes. Unless of course, I decided to try a more exotic variety. Decisions, decision.

Pan Fried Pickerel

Not fancy, still delicious! Ontario Walleye is also another name for this fish. I had seriously forgotten how fabulous this fish tastes. I'll be back for more!

I adore preserved lemon, it's always there even if you've forgotten to pick up fresh lemon.

Birthday Carrot Cake

Working on a carrot cake for my son's birthday on Thursday. I'm going for a four tier (why not). I'm going to alternate layers of carrot cake made with brown sugar and two made with golden sugar. Yes, the different sugars make quite a difference in the flavour. These two layers are in the fridge, the great thing about carrot cake is that it always improves in flavour from day to day.

I'll be baking the next two layer tonight.

I have to work on my cream cheese icing, I want a pipeable (sp?) consistency. I've been perusing a number of recipes, now just the making of.

I did a practice cake on Sunday that I've since given away. Excellent cake but the icing was too soft, I think I know what I didn't do right.

So, I've managed to source wild watercress, curiosity and all that. With more calcium than milk, good for you. I had read a number of recipes, decided to go with the saute ideas. Very simple, minced ginger, shiitakes, add watercress, off the heat, drizzle with toasted sesame oil.

Would be nice if I could just go pick the watercress myself but, some knowledge and where to are issues. Oh well, there are other ways.

You will need:

Preheat your oven to 400F.

You will need:

Potatoes, Cheese, herbs (dried or fresh), meat (bacon or sausage), garlic, onions (optional), cream

Potatoes - personally I am a fangirl of the yellow fleshed potatoes (yukon gold or other varieties), you get a creamier finish. If you can't find them, red will also work.

Peel and thinly (read 1/8 inch) slice the potatoes and place them in cold water. Rinse twice. Dry fairly well using a couple of clean dish towels just before you start layering. How many is up to you and the people you will be feeding.

Use a casserole dish or an oven friendly fry pan.

Meat, you can use bacon or sausage, fry the meat off and remove from the pan. This is a one pan (if using the fry pan) meal, possibly two (casserole dish). I you are using onion, soften the onion by cooking it with the meat.

Start by layering potatoes on the bottom, season each layer with salt and pepper, next sprinkle the meat over, next cheese (shredded or sliced). Sprinkle herbs between the layers if you are using them. Pick a cheese that melts nicely (google it). Rinse, repeat. I personally don't like to layer more than 3 or 4 layers, otherwise I find it takes WAY too long to cook.

You can get creative with what you put between the layers. If it's something like onions, you really should precook them.

Season the cream with salt and pepper. How much you use will depend on your pan/casserole. First time you make the gratin, you'll learn, the same as I did. You only want the cream to come up about 1/3rd of the depth of your pan/casserole.

Cover with foil. Put something (cookie sheet, foil, whatever you have) underneath the gratin. Guaranteed it will bubble over, mine ALWAYS do so.

Bake covered for 30 - 60 minutes. I don't know the size of the pan/casserole you'll be using. If it's tiny, obviously less time, bigger more time. Take it out and check the potatoes to see if they are tender. I made this gratin in a 12 inch oven safe fry pan. Leaked twice, cooked for about 70 minutes before it was tender.

When tender, remove the foil cover, add cheese and bacon/sausage and cook until the cheese is melty and the top is golden brownish. Let the gratin sit for about 15 minutes before dishing out. Gratins/scallop potatoes kind of work like steak, a resting period works well.

Caers, if you have any questions please don't hesitate to ask. I'm hoping I haven't screwed up in any way and have made the technique fairly understandable. :)
