Reed practices a flamboyant self-invented style, characterized by percussive techniques and simultaneous rhythm and melody lines that dance and ricochet around each other, giving his music a level of excitement that is unparalleled among today's guitarists. Playing an array of guitars from acoustic to electric to classical Reed's vast range of explosively original music will forever change your expectation of a guitarist. First-time listeners find it impossible to believe that they're hearing just the one musician, in real time. Reed attacks the entire instrument in a never-ending search for the orchestra he knows is lurking inside. At full tilt, his fingers, thumbs, fists and hands at once suggest a drummer, keyboardist, bassist and several guitarists at work. The most impressive thing about Reed's technique, though, is that it doesn't draw attention to itself. His compositions are far from abstract virtuosic displays; even without lyrics he creates vivid, engrossing scenes. Sometimes the effect is almost onomatopoetic. Reed generates visual stimuli with every tweak of his instrument, thus augmenting his wordless compositions with an aura of the poetic. Each tune is a story in itself with a potent, cinematic atmosphere and an almost tangible thread of communication between Preston Reed and the listener. Reed's entry into this guitar odyssey was inauspicious enough, his path thereafter largely self-discovered. A few chords learned from his guitar playing father, a brief, very brief, flirtation with the ukulele, clandestine practice sessions of his favourite Beatles and Stones songs on dad's guitar .... and then a too-strict classical guitar teacher led to premature retirement. At 16, however, Reed heard Jefferson Airplane's rootsy blues offshoot, Hot Tuna. His interest was rekindled big time. Acoustic guitar heroes John Fahey and Leo Kottke were studied, their styles absorbed but not imitated, and at this point things really begin to get interesting because, at 17, Reed, by now precociously proficient, played his first live gig, supporting beat poet Allen Ginsberg at the Smithsonian Institute. Just getting on a train from his native Armonk in New York State to Washington was a cool adventure. And it was just the first of many, not least of which was the one which resulted from his signing his first deal with a major record company, MCA, through the auspices of his friend, country singer-songwriter Lyle Lovett. Determined to make the most of this opportunity, Reed pushed himself to go beyond the standard fingerpicking styles he'd perfected. I had the best intentions of making a salad to go with this, oops. After getting a batch of peach jam into the freezer, I was a bit on the lazy side. On homemade bread, I didn't make the butter though (see how lazy). wink, wink

Tasty, delicious, I so hope there are figs at the Italian Center on Saturday. I could use another case of indulgence.

Garbure (thick meat, bean and vegetable soup)

Smoked Bacon, Chicken, Duck Stock, Leeks, Carrot, Butternut Squash, White Beans, Savoy Cabbage

One that I first had in France, traditionally, the soup contains confit duck. When you don't have confit duck, you can flip the soup on it's ear a bit. I used a duck stock that I had made a while ago, along with chicken legs and smoked bacon. I had looked for smoked pork hock or smoked ham at the farmers market but no, not available.

The vegetables are so fresh and delicious, all from Strathcona Farmers Market, used the same day. The soup is very versatile and can consist of a variety of ingredients, read what's available.

Served with a crusty bread from the Italian Center, delicious and helping with my cold. Looking forward to a bowl of soup tonight, after an overnight melding of flavours, should be out of... more »

Nestle's couldn't give two shits about the ecosystem and or people in the area. They are slowly working their way towards a monopoly on water (the next black gold imho).

The Council of Canadians, a non-profit social action organization, said the Grand River watershed, where Nestlé’s well and bottling plant are located, is a fragile ecosystem feeding into Lake Erie that must be protected.

“The Nestlé well near Elora sits on the traditional territory of the Six Nations of the Grand River, 11,000 of whom do not have access to clean running water,” said council chair Maude Barlow.

According to Health Canada, about 2,000 people in Six Nations are hooked up to the community water system, but “many residents use cisterns for drinking water and receive deliveries from provincially regulated, off-reserve water providers.”

Ginger Tea

Honey

I feel like crap, my face hurts, dam colds....

This, this helps immeasurably, ginger tea. A large (or couple of) knobs of fresh ginger, peeled (I use a vegetable peeler), diced. Add a couple to few cups of water, bring to a simmer, simmer for 20ish minutes, pour through a sieve to remove the ginger. If you're hardcore, leave the ginger in. Add honey to taste.

A couple of cups of this per day have been helping with the face pain, dam sinuses. The sore throat is gone, gargling with salt water always helps this.

I think today will be a lost day, relaxing, resting, making a killer soup for dinner. Screw packing today (I've put much effort in this week already).

I might bake today, depending on how I feel.

Broken House

Is broken. It's official, Health Board says that we can't stay here for any length of time (we have about a week at most). On the positive side, damage deposits have been dropped off for the new rental apartments (time for son to move into his own place).

I seriously can't wait to show off the new places, one extreme to the other. Luckily friends should be willing to give us a place to crash for 2 weeks to the month required. Leave our things here, packed and ready to go. I'll work on it with the landlord, could be much worse for him if we chose to make it so. In a perfect world, we would get an October 15th move in date, the world is often not perfect.

I am spoiled as I am getting top floor (yes elevators, I'll see about using the stairs for exercising), south facing. I'll be able to welcome indoor rosemary and lavender back into... more »

Chicken Thighs, Fennel, Onions, Garlic, Orange Zest/Juice, White Wine, Rice

All in one pan kind of meal, definitely a fav as there is less cleanup.

The fennel from the farmers market is huge and very fresh. Combined with sliced onion, garlic, orange zest/juice, some white wine, olive oil. Tossed together, poured over the chicken thighs, roasted in a 425F oven for around 45ish minutes. The pan sauce was especially lovely.

Rice, for some reason, didn't want to cook properly last night, only a few crunchy bits. No idea why the rice didn't seem to want to behave. Oh well, still delicious.

I'd so make this dish for company, a little fennel pollen, some fronds on top.

Spiced Lamb Belly Tacos

Slow Roasted Spiced Lamb Belly, Red Cabbage, Sheep Feta, Pickled Red Onion, Red/Green Pickled Chili's, Cilantro

I adore boneless lamb belly, absolutely perfect for tacos. Spice rub (with mystery spicy lamb rub discovered while packing), in a 300F oven, covered, low and slow for 2 1/2 hours. Wickedly delish!!!

All other additions as just gravy.

And then you do something silly like overheating the tortilla's, doesn't matter, eat them anyways.

Slow Roasted Spiced Lamb Belly, Red Cabbage, Sheep Feta, Pickled Red Onion, Red/Green Pickled Chili's, Cilantro

I adore boneless lamb belly, absolutely perfect for tacos. Spice rub (with mystery spicy lamb rub discovered while packing), in a 300F oven, covered, low and slow for 2 1/2 hours. Wickedly delish!!!

All other additions as just gravy.

And then you do something silly like overheating the tortilla's, doesn't matter, eat them anyways.

And the son gets his digs in over actually having tacos on Tuesday, dammit!!!

Leftovers, I adore you! The leftover mash from the other night, with the addition of garlic/onions/cabbage/madras curry powder. Fry it all up, nirvana comfort food, I love spicy.

The sausage maker is German, hence he calls all of his pork sausage bratwurst, which is correct. I had thought bratwurst was a certain spicing, from what I can gather, it necessarily isn't.

A dollop of chili-garlic paste, wonderful meal.

Truthfully, I used to buy things like frozen waffles. The more I learned about the processed food industry, the more I learned to make it myself. Does it take some time, yes, effort, yes, learning, yes. Completely worth it, I even find it fun and rewarding (crazy hey!!).

Apple Cinnamon Loaf

Playing around with a new recipe last night. I have lots of apples that need to be used up. Trying to use up fresh food in case there is a quick move to temporary lodgings.

Lovely crumb, great flavour! I doubled the recipe as I didn't have the required size of loaf pan. Double is a bit too much batter, probably one and a half would have worked better. Oven temperature turned down by 25 degrees due to dark loaf pan. Son adores this loaf so I could bake a couple of more loaves to get it right. Perhaps double and use some of the batter for muffins.

Still super tasty if the top isn't quite right. Great for breakfast with coffee!

I'm thinking I may have lied about eating just wraps and sandwiches while packing. I'm sorry, just can't help myself, cooking relaxes me or possibly eating comforts me, a bit of both?

A lovely chuck roast from Acme Meats here in the city (highly recommended). From an order I had put in before all the stuff with the house went down, I committed to the order, I felt I had to follow through on it. A good portion of the cuts I ordered are braising cuts (fall and all), so they can cook while I pack.

Added the roast and bacon back in, poured over a combination of maple syrup, smoked paprika, chicken stock, garlic, grainy mustard and balsamic. Slow and low for about 3 1/2 hours. Removed the chuck roast (falling apart tender) and reduced the braising liquid by two thirds. If this had been a restaurant dish I'd have pureed and strained the braising liquid. That's messy and I don't like doing dishes that much at home.

A pot of yellow fleshed potatoes (fresh from the farmers market, I was told the variety but brain fart), mashed with butter. I seem to have stopped using cream in my mash and just going with straight up butter (generous with the butter).

Sauteed oyster mushrooms until golden, on the top.

I think there is roast left for (possibly) sandwiches for dinner. Son put the roast away, I haven't looked to confirm. I do know there are potatoes left over, I'll see what to do with those. Perhaps a savoury pie of some kind?

But that’s kind of what’s happening with avocados, which have skyrocketed in popularity over the last ten years. I mean, they were popular before, but “avocado toast” seems to have taken them to another level. Even (or especially?) in the Northeast US, where avocados are far from locally-grown. So if you’re craving avocado toast you might want to back off and make a lovely ricotta toast — or have you tried soft-scrambling eggs? I think the creaminess is pretty satisfying in the way that smeared avocadoes are.

Shawarma Chicken Wrap

I've used the last of the Shawarma spice I've made up, I can't find the dam recipe I made it from (just freaking out a little). I have one last idea of where I might be able find it. I hope I can as it's a fabulous spice mix.

That aside, this wrap was wonderful, even the son who scoffed at the slaw (he's not the biggest lemon fan, me I adore lemon) admitted that it was delicious. I'm pretty happy when this occurs with my cooking.

Simply, boneless chicken thighs, cut into pieces, tossed with oil, Shawarma spice and garlic. Sauteed with onions. Placed on top of shredded red cabbage, sweet bell peppers, Italian parsley, lemon, olive oil, salt & pepper and a wholewheat pita.

Two were consumed (yes, that good).

This week was the last for corn from my supplier at the market. I do have more in the freezer but not fresh.

A purely comfort food from childhood, cream corn and mash potatoes. A little different from the ones I remember. Just as comforting.

I used Sean Brock's recipe for creamed corn, delish!!!

Seared chicken thighs, cooked with onion/garlic, crimini mushrooms, pan deglazed with a little white wine and reduced. Nailed this part of the dish.

Amarosa mash, son commented about pink mashed potatoes. I had to agree, the only potatoes I had for mash. Just have to be weird sometime.

I splurged on figs, I guess near the end of the season but only here the last couple of weeks.

The slow roasted figs are amazing. I have to build some food around these.

Edit:  Basic technique for slow roasting figs:

Figs, sugar, lemons, water (additional flavours - spices/herbs), cover, roast in a 300F oven for a couple of hours. The sugar/honey-water ratio is up to you, basically making a simple syrup. After a couple of hours, raise oven temperature to 400 and reduce the water/sugar or honey liquid to a syrup. About 2 or so hours, keep an eye on the figs towards the end of the cooking time so the syrup doesn't scorch.

Comfort was appreciated as I've just learned that the sewer line is collapsing (water in the basement). Plumber was brought in and due to the cost, landlord has no intention of fixing. Can you say move under pressure. I'm pissed (landlord knew of this issue, he was warned by other plumbers) at being put in this position. Comfort was appreciated as I've just learned that the sewer line is collapsing (water in the basement). Plumber was brought in and due to the cost, landlord has no intention of fixing. Can you say move under pressure. I'm pissed (landlord knew of this issue, he was warned by other plumbers) at being put in this position. Not certain what's going to happen but the lease is now null and void, just a matter of finding something. This time of year isn't the best but. And, fml, packing everything, etc, etc....

I'm going to go cook today, always makes me feel better.

Cumin Lamb Tacos

Pickled Onions, Feta, Sweetheart Cabbage, Corn Tortillas, Mexican Street Corn

Ground lamb, cooked with onions/garlic/cumin/ancho chili. I had been seeing tacos served with two tortillas many places. I looked up the reasons for doing so and they made sense so. Actually it's A LOT better, less splitting, more corn flavour.

Mexican street corn again, added a little more feta this time, shouldn't have, the sauce didn't coat the corn as nicely. Also tried a different method for roasting the corn in the oven. Out of the husk, on a pan, drizzled with a little butter. Better in the husk. Oh well, you have to try new things to learn.

Habanero Salt

Check, a batch of Christmas presents made and curing.

Habanero Salt

2 cups coarse sea salt
2 ounces pureed habanero (red gives the nicest visual)

Mix well, place in jars, shake every day for 1 month. I recommend using a cut up plastic ziplock as a liner due to the fact the salt/habanero mixture will eat away at the lid.

I think the chili heads on my list shall enjoy.

Healthcare Canada

I'm hoping that this attack on our healthcare system by the Harper government will be corrected. Fixing 10 years of Harper is going to take some time. This is one item that Canadians will not tolerate.....

I don't want a U.S. system of healthcare, I don't think I'm alone in this.

The agenda is being achieved by starving the provinces of required funding. Once the 2014 Health Accord is expired, the Harper government will reduce its Canada Health Transfers (CHT's),  monies transferred from the federal government to the provinces - by$36 billion, up to the end of 2024.

The void of insufficient funding will be filled by corporate health care. Once this is achieved, Canadians' access to health care will be restricted, user fees will increase, insurance coverage will cost more, and patient fatalities will rise in... more »
