Apple Pie
Nothing can be compared with a good home made apple pie.
The filling is the usual apple, cinnamon, raisins soaked in rum.

No Knead Rustic Bread
Is perfect when is no much time but the bread has to be made. I am doing it after coming back from work, it takes just a few minutes until mixing the ingredients with a silicon spatula in a plastic container.
Ingredients:
500 gr (17.6 oz) flour - this time was white 00 flour, but can be mixed half/half
370 ml ( 1 1/2 cups) warm water
1 tsp honey
1 tsp salt
15 gr ( 0.52 oz ) fresh yeast
It is mixed together the yeast, honey and water and added to the flour and salt.  All the ingredients are stirred / mixed, covered with cling film or a lid and let rise for 1,30 h in a warm place. After this time the dough will rise about three times the initial form.
The oven is preheated to 230 C ( 446 F ) with some water inside for extra crust.

Chow Mein Noodles with Chicken Breast and Vegetables
Using simple ingredients and vivid colors, was a very good lunch for this gray and rainy Saturday.
I stir fried : - strips of chicken breast seasoned with salt, pepper and nutmeg
In the same wok, after removing the meat;
                - scallion, ginger, garlic, carrots, zucchini, mushrooms, red bell pepper seasoned with soy sauce, pepper, Chinese five spices.
Boiled for 4-5 minutes the noodles.
Served all together, was a light and tasty lunch.

Ricotta and Chocolate Tart

I made this tart using +ada parisi 's recipe, shared on 25-th of January. Is a very tasty and visual tart, with a smooth ricotta cream. The indications are very detailed and clear, so it was easy to follow.
I will copy her recipe:

"Ingredients for a cake tin 22-24 cm:
for the stuffing:
600 grams of ricotta
170 grams of extra-fine sugar
70 grams of dark chocolate
40 grams of mixed candied fruit
cinnamon to taste
vanilla extract to taste
the grated rind of one orange
For the pastry:
400grams flour 00
200 grams of cold butter
160grams of sugar
grated zest of one lemon
vanilla extract
two yolks
a pinch of salt

Focaccia
What can be better than a good slice of Focaccia, with caramelized onion on top, sprinkled with rosemary? Simple ingredients, maximum effect.
It was made according to +Andrea Grillo 's recipe, so many thanks for it.

Puff pastry is a hit always, in salted or sweet version.
I made the appetizer way, the little ones are beer sausages, with stripes of pastry wrapped around. The triangle ones are filled with:
- cheese and beer sausages cut in slices
- mushrooms, green onions, mushrooms and red bell pepper cooked together with a little olive oil, until the liquid is reduced.
Just brushed with an egg yolk and baked in the oven, at 170 C ( 338 F ) for 20 - 25 min.

I made for dinner yesterday a wonderful dish, following +ada parisi  's recipe. I don't know how is called, but it has interesting combinations, which are unusual for me. I never thought I could put together fennel - raisins - sardines. I didn't have anchovy, pine nuts and instead of the Italian pasta I had spaetzle, so I gave a German touch with it ;-)
I will copy here again Ada's recipe, with many thanks.

Ingredients for 4 people:
400 grams of bucatini
400 grams of sardines
250 grams of wild fennel
a tablespoon of tomato paste
4 anchovy fillets in oil
20 grams of dried raisins
20 grams of pine nuts
1 saffron
a pinch of sugar
half an onion
salt and pepper to taste
extra virgin olive oil to taste
