Recipe
Sugar is added to the cold coffee and water mixture. You need to specify whether you prefer glyko (sweet), metrio (medium), or sketo (no sugar). The mixture is heated to dissolve the sugar, then the coffee is boiled until a froth forms which begins to bubble up the pot.

The day of reckoning has finally arrived!!!  ;-)
I've allowed the minimum two-days of "outgassing" after roasting the beans, so now I finally got to put them to the test. I'll say right up front that they've passed all my levels of scrutiny beyond my wildest expectations!!! =D =D =D

I judged my results based on the aroma of the grounds (sorry, you'll have to take my word for it), the color, the crema production, and ultimately the taste. As noted previously, my roast is a tad darker than intended, which is owing to my inexperience in identifying and timing the "second-crack" during the roasting. Even so, my roast is only slightly darker than the "golden standard" professionally roasted Espresso Vivace "Dolce" blend, having started from the green/unroasted Dolce bean blend in each case (though, mine is from weeks later).

To be fair, I have had the pre-roasted "Dolce" on hand for a few weeks now, so they're already beyond what David Schomer would call their maximum shelf-life of 10 days when stored in an air-tight container (as I do). :S

That said, David Schomer's roast is lighter and sweeter than mine, which I am inclined to blame on my aforementioned roasting a bit darker than intended...more so than his roast being past its prime (I would expect it to age toward more bitter not more sweet). :-/

In any case, I am VERY pleased with my result -- the aroma of the freshly ground beans was DIVINE.
They're only slightly darker than the professionally roasted, but not too dark and the taste was correspondingly only just slightly more bitter, which I don't mind at all. =D
By my back-to-back comparision, I would estimate that the crema production was indistinguishable for the professionally roasted beans vs. mine, while pulling the shots. =D

Segments:
250°F: Pre-heated and 250g of beans added to the hopper, fan at 0%
325°F: Fan to 25% in response to an increase in smoke
360°F: Fan to 50%; Heat to 90% in anticipations of first crack
370°F: Fan to 75%; Heat to 70% in anticipation of first crack
379°F: First Crack begins
388°F: Fan to 75%; Heat to 40%
402°F: First Crack ends, Fan to 100%; Heat to 40%
415°F: Second Crack begins, Fan to 100%; Heat to 30%
428°F: Manual Eject (5 mins of 25 remaining on countdown timer)

As for this roast, it turned out just a little over-done, according to my tastes.
I think I have a good baseline on the bean mass temperatures to pre-empt the first crack, which is the most important thing for extending the roast to get just a little oily shininess on the beans, without turning it to shellac -- but this time I got a bit more oil showing than I like.

Ambient Conditions: 68°F / 31.62 InHg.
Target Bean Temp: 417°F (maximum allowed by HotTop -- this is way high, but I want to manually eject, long before that temperature is reached, anyway).
Target Time: 25:00mins (more time than needed).

BEAN Temperature Segments:
250°F: Pre-heated and 250g of beans added to the hopper, fan at 0, heat at 100%
270°F: Fan to 3 in response to an increase in smoke
330°F: Fan to 5
350°F: Fan to 8; Heat to 80% in anticipation of first crack
361°F: First Crack begins; Fan continue at 8; Heat to 40%
388°F: First Crack ends, Fan to 10; Heat continue on 40%
395°F: Second Crack begins, Fan continue on 10; Heat to 30%
406°F: MANUAL Eject at 13:00 minutes after the hard-coded 167° preheat temperature.

I am using an alternative approach to extending the time between first and second crack, as described here, but I am still tweaking things as I get familiar with the bean mass vs. roasting chamber temperatures:

I made this back in 2004, and still use this method today with a couple small changes, I no longer switch temps, I just leave it on high, and I use a long wisk instead of the Hario bamboo paddle. Other then that, I use this very same heat gun and bowl over 10 years later....

Background ;  been roasting for > 10 years ; started with a Hearthware Roaster(s) ,  the Zack and Danny's ( now Nesco ) and currently have a Freshroast.   Early days were picking up tips from Mark, Randy and others that my foggy brain do not remember on alt.coffee - still have my t-shirt to prove it. 

We tend to like a darker roast ;  a little to even a higher sheen of oil -- almost , but not quite Charbucks -- 

So.. after a first crack at it -- leaning towards the Gene Cafe Home Coffee Roaster -- excellent video on it here https://www.youtube.com/watch?v=b537paZQ4jw

I ran it on "auto" just to get familiar with how it works.
I had read the entire manual to try to determine if/when I might need to tweak the roasting, mid-cycle.  First and second crack passed while I was watching the color of the beans and the next thing I knew they were being ejected at 428ºF before they were quite to the level of darkness that I wanted.

They were almost as dark as I wanted, but not quite.

I went back to re-read to see how to extend the roast, just a tad.
It turns out 428ºF is the safety cut-off temperature.  :-/

I learned that as first-crack started, I should have cut the heat by50% ... more »

Columbia Huila El Tempo de Palestina from Sweet Maria's. 150 g roasted in a 150 deg F preheated poppery unit 435 deg F was achieved.

The last two batches I have upped my beginning roast weight from 120 to 150 grams. So far it seems I am achieving a more uniform roast. This is the limit for the original West Bend Poppery. I had to stir this batch until first crack.

From the past ten batches I have lost nearly 15 % weight between green and roasted beans. Does anyone else track and compare green bean weight and finished roast weight? I do my best to avoid bean loss but I do lose a few here and there.
