Nonna Rosa's Italian almond biscotti recipe

Well I was overrun with messages and email request for my Nonna's Biscotti recipe, so here it is. 

Ingredients

Eggs - 4
Self Raising flour - 1 1/2 cups
Plain flour - 1 1/2 cups
Sugar - 1 cup
Fresh lemon rind - 2 lemons
Vanilla essences - 2 teaspoon
Whole almonds - 500g/17.6oz
Brandy - 1 cup

This is my new book I am reading, after finishing my last book, Why Italians love to cook. Just love immersing myself in my #italiancooking heritage.

P.s. Yes I read most of my cooking books cover to cover to understand what the author is wanting the reader to feel. Helps with my working progress book. Drink regularly from good books, especially the bible.

What’s in your fridge?

This has to be the best question I get asked of from friends when I randomly arrive at their house.  They say “ Oh Adam you can cook dinner then!” My reply is always “Ok, what’s in your fridge? “ 


It’s so amazing to see what people keep in their fridge. You don’t always have to go shopping to make a super meal. I had this happen to me a while ago, when I travelled back to Australia after being in Florida for a few months with a client. I decided to meet up with an old friend and we went back to his house for dinner. I got the question of cook dinner please? But we have to go shopping first; I don’t have much at home. So I did the, lets see what the fridge has. 

I did my scans of the fridge and found, half a piece of fennel; some pumpkin pieces some pieces of meat, butter and some tomatoes. So I already looked to thepantry and found som... more »

Who loves shopping for fresh ingredients at the local markets?

The other shoppers walking around with their little trolleys looking for the best and freshest produce to take home. I just feel like a child in a candy store when I think of these experiences. 

I constantly enjoy the thrill of fresh market shopping around the world, and it never gets boring. But one thing can become a little painful, the huge amount of people traffic and locations of everything, which can become very stressful!

Ok I am appealing to all my Indian friends on Google plus, I am seeking the ultimate Butter Chicken recipe. One of those treasures that your grandmother got from her grandmother and has passed it all the way down. You know when you eat it, it reminds you of your childhood!

Well I am sure you know that I am a self confessed freak of anything almond based! Italian Almond biscuits are my all time weakness! The soft chewy centre with the almond burst and the outside crust to finish it off. Yummy. 

So tell me what is your favourite biscuit and how do you prefer there made?

What is the best food critic compliment you have ever received from a meal you prepared? Or what is your best food critic compliment you have given?

I just had one of the best compliment ever regarding my ciabatta bread!

A friend who is working in Australia shared Easter lunch with us and he said my bread tasted exactly like the bakery next to his house in Sardinia. Wow I feel very happy and excited I got such a great approval from a very fussy Italian bread critic!

I have an Italian banquet. Lasagne, roasted peppers, pork and fennel sausages, Sicilian potato salad, tomato salad, meatballs, and Tira mi su to finish it all off!

Oh can't forget the home made limoncello.

Well this is the final segment of my mini series Along the way and I have my Nonno Giuseppe showing us How to make coal roasted peppers

These are my all time favourite treat to have on the table with some bread. 

I hope you have enjoyed these segments and thank you for the support of my Nonna. She is still in hospital ans they are confirming the assessment of early onset of Dementia. We all just have to be patient and support her now. So thank you for your support and prayers.

What was the results? 

Success or lots of crying? 

Well this is holy grail of Italian cooking, the humble Potato dumpling named Gnocchi.

I know there are many versions of the classic and all just as good as the next, but for me I learnt this from my Nonna Rosa and she learnt it from her mum and so the generations on.

Well in part 3 of 4 my Nonna Rosa who shows us her magical recipe and method to make her delicious Italian delights. I could go a plate right now, but I just got back from the gym.
